Matka Kulfi/Malai kulfi
I am very much fond of kulfi ,especially in summers. Matka kulfi is made up of pure milk with added flavors of green cardamom and some nuts. Malai kulfi is described as a popular traditional Indian Ice cream.
kulfi comes in various flavors like rose,mango,zafrani,pistachio
and the basic malai flavor. Kulfi is not whipped,its a dense frozen
dairy based dessert.Due to its density kulfi takes time to melt as compared to western ice creams.
Kulfi is prepared by evaporating sweetened flavored milk via slow cooking.With almost continuous stirring to keep milk from sticking to the bottom of the vessel where it might burn,until its volume is reduced by half .This process makes the kulfi more creamy and it increases its fat too.Serving the kulfi in earthen pots enhances its flavor and gives a refreshing taste also.The use of earthen pot known as matka adds an aroma too in the kulfi.
I have added some crushed pistachios and almonds also to make the kulfi tastes more rich and yum.I still remember those golden days,when i use to go to my granny's house and in the evening i use to wait eagerly for that Tan Tan sound :-D ,yes the bell man i.e. kulfi wala. He used to sell his malai kufi which was known as Tilli Wali kulfi ,as this kulfi was served onto a stick.Those days can not come back but it has left withsome unforgettable sweet memories :-)

Ingredients -
- 1 liter full fat milk
- 1 cup fresh malai
- 2 tbsp milk powder(optional)
- 2 tbsp pistachio(cut it in small pieces)
- 1 tbsp almonds(cut in small pieces)
- 2 to 3 green cardamom powder.
- 1 cup sugar (you can reduce or increase the quantity according to your taste)
Method -
- Take a heavy bottomed pan or heavy kadhai and heat it up.
- Add milk and malai both at the same time.
- Add cardamom powder,milk powder and mix it well.
- Stir continuously to avoid lumps.
- Boil the milk.
- After a good 2 to 3 boils add almonds,pistachio and sugar.
- Stir to avoid the milk from getting burnt.
- Boil the milk till the milk starts reducing and thickens.
- Now switch off the flame and let the mixture cool down.
- Take the matka and pour the mixture and cover it with a foil paper with a rubber band around it or you can also cover it with a cling film.
- Freeze the matkis for 7 to 8 hours.
- Lastly garnish the matka /malai kulfi with almonds and pistachios.
- Enjoy your memories and yummy Matka Malai kulfi together.
