Aloo Tamater Ki Sabzi (Potato Tomato Gravy)

Today I am going to share one of the easiest and tastiest recipe of aloo ki sabzi. This sabzi does not need any special ingredients,just few spices can do wonders in your meal.
Aloo ki sabzi is one of my favourite sabzi since childhood.When i was in school I use to demand this to my mom in my Dabba (tiffin) but not only this,i also request her to make puri ,request?Yes because my mom was working,as she is retired now,so she was not having that much sufficient time to make all this kind of stuff,but Mom can never deny their children for anything specially food :-) So when she use to make my Tiffin i use to dance and shout by saying "yeah today is Aloo Puri Day" :-P.Those golden memories i miss them a lot!
This sabji can be eaten with rice also and it tastes yum..but i love to eat this with my favourite fluffy pooris .You can have some raw mango pickle also with this and it will add a tangy taste in your taste buds.I have added chilli powder but you can avoid this if your kids are not fond of spicy food.This Sabzi is a one pot meal as i have made this in pressure cooker,so its a hassle free recipe too.

Ingredients -
- 3 to 4 raw big sized potatoes (cut in cubes)
- 2 medium sized onions (roughly chopped)
- 4 red tomatoes ( i have used desi tomatoes because they are tangy)(roughly chopped)
- Garlic chopped (4 to 5)
- Cumin seeds - 1 tsp
- Tej patta ( bay leaves) (1 or 2 leaves)
- Salt as per taste
- Sugar - 1/2 tsp (not for sweetness just to balance the tangy flavour)
- Red chilli powder - 1 tsp
- Turmeric powder - 1/2 tsp
- Dry mango powder - 1 tsp
- Garam masala - 1/2 tsp
- Coriander powder - 1 1/2 tsp
Method -
- Take a pressure cooker add 2 tbsp oil heat it up and add cumin seeds and bay leaves,let it crackle.
- Now add onions and garlic and fry till it gets translucent in colour.
- Add sugar in the onions.
- Now add salt,turmeric powder and red chilli powder and stir it for few minutes.
- Then add tomatoes and mix them properly.
- Saute till the tomatoes turn soft and mushy.
- Now add potatoes,add dry mango powder and coriander powder and mix it well till the potatoes coats the spices.
- Add 2 and 1/2 cups of water and again mix it.(if you want thin gravy add more water)
- Cover the cooker with the lid and wait for 3 to 4 whistles.
- Now after whistles open the lid of the cooker and with the help of a spoon press the potatoes ,this will make your gravy more thicker,add garam masala and mix it well.
- Your Aloo tamater sabzi is ready to enjoy with pooris or rice or even chapati too.
