Pyaz ki Kachori
Diwali festival is around the corner! As we all know that in this upcoming festive week our relatives,friends and neighbors will be coming to our house for giving gifts and wishes,so we normally buy some snacks like kachori,namak pare,matthis from market.But this time i have thought to make some salted snacks at my home to make our guest feel that they are special to us :-)
I remember my nani /dadi they used to make home made sweets and salted snacks on the occasion of diwali and holi and when we go to there house,they used to serve the home made namkeen and sweets and pack a dabba also for our house!
When we used to refuse for this she used to say "its home made and made up of pure ghee"Yes ! she was right the home made taste is always the best :-)
These kachoris are really delicious as the masala of onions is spicy,sweet and tangy.I have made these kachoris for my guests !What about you?

So here goes the chatakedaar recipe of Pyaz ki Kachori-
Ingredients -
For Dough
- All purpose flour - 2 cups
- Ghee (i have used desi ghee)-2 tbsp
- Salt as per taste
- Ajwain - 1 tsp(optional)
For Stuffing-
- Chopped Onions - 3 medium sized
- Grated ginger - 1 tsp
- Fennel powder- 1 tsp
- Turmeric powder- 1 tsp
- Coriander powder - 2 tsp
- Carom seeds - 1 tsp
- Red chili powder as per taste
- Dry mango powder - 2 tsp
- Sugar - 1/2 tsp
- Salt as per taste
- Rasins - 7 to 9 pieces
- Cashews (finely chopped)-5 to 7 pieces
- Oil or ghee for frying
Method-
- Firstly take a bowl add Apf in it ,add salt and mix it well.
- Now add ghee 1 tbsp in it.
- Add water gradually in it and start kneading the dough.
- Add rest of the ghee and knead a soft dough.
- Not too soft neither too hard.
- Keep the dough for rest by covering it with a damp cloth and keep it for 30 minutes.
For stuffing
- Take a wok add 1 tsp oil in it.
- Now add cumin seeds .
- Add chopped cashews and fry them for 1 to 2 minutes.
- Add onions and ginger in it.
- Now add all the dry masalas turmeric ,salt,coriander powder,mango powder,fennel powder,sugar,red chili powder and mix it well.
- When the masala has mixed up properly add raisins in it.
- Now turn off the flame and let the masala gets cool down.
Now take the dough and divide it in small balls and make its small chapati like we make for puris.
With the help of a roller pin make thin round shape.
- Take a wok add oil or ghee whichever you prefer and let it heat up properly.
- Now take 1 circle and fill the center with 1 to 2 tsp of onion stuffing and start folding it by taking the edges of the circle.
- Now seal the edges like making a potli.
- Make more kachoris like this and deep fry them.
- Fry them till they turn golden brown and keep them on an absorbent paper.
- With the left over dough i have made plain namak para also.
- Your home made pyaz ki kachori is ready to enjoy!
