Spicy creamy Sandwich

Spicy Creamy Sandwich
Sandwich is the most easiest and quickest choice of food for your breakfast or for lunch also.Even sometimes i like to make them for my dinner also,when i am home alone ;-) because they are jiffy and hassle free to make.
These sandwiches are spicy but your kids can also enjoy them by making it less spicy as the creaminess will reduce the spiciness and balances the flavor.
How can i forget that these sandwiches are healthy too because it contains veggies and when you are going to mix it up with there favorite mayo and sauce,kids would never deny for it.


I have served the sandwiches with some wafers and mayo salad,
this will enhance the taste of the sandwiches!
You can also send these sandwiches in your kids tiffin as they will not turn soggy for few hours because its crispy from outside and soft from inside.


So no more wait to enjoy this yummy recipe -
Ingredients-

  1. Bread slices - 4 slices
  2. Cucumber - 1 (grated)
  3. Carrot -1(grated)
  4. Capsicum -1 (Cut in juliennes)
  5. Onion - 1 (finely sliced)
  6. Coriander leaves - 1/2 cup (finely chopped)
  7. Mayonnaise -3 to 4 tbsp 
  8. Salt as per taste
  9. Pepper powder - 1 tsp
  10. Green chilies - 2 (finely copped)(optional)
  11. Hot and sweet sauce - 2 tbsp
  12. Butter to fry the bread.

Method -
  1. Take all the veggies except coriander leaves and put them in a bowl.
  2. Add salt and pepper in it.
  3. Now add mayonnaise in it.
  4. Mix it well.
  5. Add hot and sweet sauce and lastly add coriander .
  6. Again give it a mix.
  7. Take a tawa heat it up.
  8. Spread butter on the tawa.
  9. Take the bread slices and fill it with the stuffing and put it on the tawa.
  10. Press the bread with a spatula or any flat spoon.
  11. Now when one side will turn golden,flip it to the other side and let the bread turn crispy.
  12. Your yummy Spicy Creamy Sandwiches are ready to gobble up!
  13. Enjoy it with some wafers and some leftover filling.

Chutney Aloo

Chutney Aloo
Again Aloo Dish on my blog ;-) Sounds boring?Na - Na! do not feel like that because a simple aloo can be made by doing variation through adding flavors in your cooking skills.
This chutney Aloo is spicy, tangy and you cant stop yourself from eating it just like a chat!
When my daughter asked mom what are you preparing for dinner ?I told her ALOO  :-P and she was like mom please "No More aloo",I am bored of this".Oh!I said ok you can have your bread cheese :-( 
When I served the dinner with my Chutney Aloo and hot Ajwain Paranthas,she said 'mom these potatoes are looking different' I said that have your bread cheese ;-) ,she kept her bread on a side and took a bite and asked for more. Haha!Such a sweet feeling you get as a mother that your kids are loving simple Aloo.



This chutney Aloo you can have it as a chat or as a proper vegetable in your dinner,breakfast or lunch,as per your choice.
The crispiness of fried aloo and the flavor of coriander is really different.So you can try this recipe for your kids as an evening snack option or in their tiffin also.


Here goes the must try recipe of Chutney Aloo

Ingredients-

  1. Baby potatoes - 10 to 11 
  2. Onion - 1 medium sized(thinly Sliced)
  3. Coriander leaves - half cup
  4. Green chilies - 2 to 3 (optional)
  5. Oil for frying
  6. Salt as per taste
  7. Red chili powder - 1 tsp
  8. Coriander powder - 2 tsp
  9. Mango powder - 2 tsp
  10. Turmeric powder - 1/2 tsp



Method -

  1. Firstly par boil the potatoes and peel off its skin.
  2. Take coriander leaves and chilies and grind them in a mixer.
  3. Now Take a wok add oil around 3 tbsp and let it heat.
  4. Add sliced onions and fry them till they turn little brown in color.
  5. Now add the boiled potatoes in it and fry them till they start changing its color.
  6. When the potatoes are done add the coriander and chili paste in the fried aloo.
  7. Add salt,chili powder,coriander powder,dry mango powder and turmeric powder and mix it well.
  8. Your chutney Aloo are ready ( for more tangy flavor you can lime juice also)
  9. Enjoy :-)

Puliodharai / Tamarind Rice With Khatti Meethi Chutney

Puliodharai is a famous South Indian dish! The tangy flavor of tamarind and the aroma of kadi patta is just superb.I am not a South Indian but when i was a kid i used to go to my mom's office sometimes and there was a south Indian aunty and she was my favorite :-D because whenever i used to come with my mom in her office she used to make this special tamarind rice for me ;-) and i love to go to my mom's office whenever i get a chance :-P 
Those days became a sweetest memory for me as she got retired and i got married!But still those tamarind rice was still on my mind and finally i nailed it with the same beautiful flavors and now its my daughter's favorite :-) 


I have served this rice with a flavorful chutney which is little sweet and sour and it is just balancing the taste of sourness of rice with a little sweetness and spiciness of the chutney!
This chutney goes very well with the paranthas,dosas or Idlies .
If you have made this chutney with tamarind rice and still you have the leftover chutney,need not to worry as you can store this in refrigerator for at least 4 to 5 days and you can have this with your normal daily food as it will be added as a condiment in your daily meals!




  So here goes the tempting recipe dedicated to my special Aunt :-)

Ingredients -
For tamarind rice -

  1. Simple boiled rice - 2 cups
  2. Oil - 2 tbsp
  3. Onions - 1 medium thinly sliced
  4. Peanuts - 2 tbsp
  5. Kadi Patta (curry leaves)- 5 to 6 leaves (wash them first with water)
  6.  Brown Mustard Seeds (rai) - 1 tbsp
  7. Tamarind water - 1 cup (soak the tamarind pulp in 1 cup of  water for half an hour strain it and store that tamarind water)
  8. Red dry chilies - 5 to 6
  9. Chana dal - 1 tbsp 
  10. Salt as per taste
  11. Red chili powder as per taste
  12. Coriander powder - 1 tsp
  13. Turmeric powder - 2 tsp
  14. Dry mango powder - 1 tsp
  15. Sugar - 1/2 tsp
For chutney
  1. Tomatoes - 2 cut in square shape
  2. Onion - 1 (square shape)
  3. Tamarind pulp - 1 tbsp
  4. Jaggery powder - 1 tbsp
  5. Chili powder - 1 tsp
  6. Salt as per taste
  7. Kadi patta - 4 to 5 leaves
  8. Cumin seeds - 1 tsp
  9. Red dry chilies - 2 to 3
  10. Oil 1 and 1/2 tsp



Method -
  1. Take a wok add oil in it and let it heat properly.
  2. Add brown mustard seeds curry leaves and dry red chilies let it crackle.
  3. Add peanuts and chana daal fry them till they turn little crispy.
  4. Add sliced onions and fry them also.
  5. Now add salt,turmeric powder,red chili powder,sugar and coriander powder and mix it well(do this on a low flame otherwise the peanuts and chana daal can get burnt)
  6. Now add the boiled rice in the wok .
  7. Pour the tamarind water on the rice and mix it very gently so that the rice should not break .
  8. Lastly add some dry mango powder and again mix it well.
  9. Your Puliodharai/Tamarind rice is ready to be served.
Khatti Meethi Chutney
  1. Take a wok add oil .
  2. Add onions in it and stir the onions for 2 to 3 minutes.
  3. Now add tomatoes and stir it for more 2 minutes.
  4. Add jaggery powder.
  5. Now add tamarind pulp.
  6. Add salt in it.
  7. Stir it till the ingredients gets mixed up properly.
  8. Keep aside and let it cool.
  9. After it cools down grind it in a mixer.
  10. Now take that same wok add 1/2 tsp oil.
  11. Add cumin seeds,red dry chilies and curry patta .
  12. Add the paste in this flavored oil.
  13. Mix it well your tangy sweet chutney is also ready to be served with Tamarind Rice.

Triple flavored fudge

Triple flavored fudge
Sounds weird ?Must be :-D 
This fudge was a real  fun for me as it is an experimented recipe made by me.But believe me it came out so yum that it got finished in few minutes ! 
The creamy fudge just got melted in the mouth and the buttery taste has left the creaminess on my tongue!
The different flavors of this fudge will give you a feeling of spiciness , chocolate and a crunch means variety of taste and its your choice which one you want to have ;-) 


  
I love white chocolates as they are already creamy but by adding two more ingredients ,yes only 2 more the fudge got creamy and softer !
The spiciness of chili ,the nutty flavor of nuts and the sprinkled cocoa is going to add a magic on your plate and of course on your taste buds .
So a very easy recipe to be made with only three ingredients and you are going to say'Wow' :-) 
My family loved this experiment what about yours? So you should try this dessert can say spicy dessert ;-) also.



This fudge also contains almonds as it is very good for eye sight and with the combination of white chocolate it will give you instant energy specially for the fussy kids.
So here goes a tongue twister recipe -

Ingredients -

  1. White chocolate bar - 150 grams( around 1 cup)
  2. Salted Butter - 50 grams
  3. Condensed milk - Half cup ( around 2 tbsp)
  4. For nutty flavor - Almonds chopped and raisins - 2 tsp and 2 oreo biscuits ( break them into small pieces)
  5. For Chili fudge - 2 tsp chili flakes
  6. For cocoa fudge -1 tsp cocoa powder.


Method -
  1. Take a wok add water and put a glass bowl on it (double boiling method)
  2. Now when the water gets heated up add butter in it .
  3. When the butter starts melting add white chocolate bars in it.
  4. Stir it till the chocolate gets melted properly.
  5. Lastly add Condensed milk and switch off the flame mix it very properly.
  6. Now get ready with your chopped almonds,chili flakes and oreo and cocoa powder.
  7. Take a box or a square tin and place a butter paper on it now spread your fudge on it .
  8. Divide it in 3 parts virtually .
  9. First part just add oreo biscuits in between and add some chopped almonds and raisins
  10. Second part is a plain fudge just sprinkle cocoa powder on it.
  11. Third part sprinkle chili flakes on the top only.
  12. Refrigerate your fudge for 1 and half hour .
  13. After 1 and half hour take out the butter paper and cut the fudge into pieces.
  14. Enjoy your Triple Flavored fudge.

Cheese onion rings

Yeah!I'am back with my favorite cheeeesseee  ;-) 
These onion rings are just you cant control yourself by eating it and those who are concerned about their weight they are going to overlook this problem as these onion rings are irresistible :-D 
I have made many dishes with cheese but they were with potatoes,so it was little heavier but these onions rings are not so as they do not contain potatoes!
In this recipe i have posted some pictures which are going to help you while making them.So it will be easier for my foodie friends to prepare this dish :-) 
Cheese onion rings you can have this in the evening snacks or the best part is that you can give this to your children in their tiffin box and they are going to be very happy to after eating this!




These Cheese Onion Rings are crispy ,little spicy and tender from inside!You can have these onion rings with butter fried bread also.As my mouth is already filled with water ! hahaha!
Cheese is our kids favorite,so i always try to give them a variation through different skills of cooking and ingredients , so they should not get bored of the same snacks.So here comes the tempting yummy Cheese Onion Rings recipe with pictures-



 Ingredients -

  1. Mozzarella cheese - Half cup (keep it at room temperature)
  2. Onions - 2 medium sized or big one (do not go for small onions)
  3. All purpose flour - 2 to 3 tbsp
  4. Cornflour - 1 tsp
  5. Bread crumbs - for coating
  6. Chili flakes - 1 tsp
  7. Salt as per taste
  8. Oil for frying


Method -

  1. First take the onions and slice them in thick form.
  2. Now make a batter in a bowl by adding APF Cornflour powder salt chili flakes and add little water to give it a paste form (not too thick neither watery)       
  3. After that take a pan and heat it with oil for frying your rings.
  4. Then the tricky part comes to fill the onions.
  5. Take mozzarella and cut it in thin long slices and fill them in the onions by taking the onions rings out.
  6. After filling it rearrange the rings and try to combine it together.
  7. Then take the rings and dip them in the maida paste and then coat it with bread crumbs.
  8. Deep fry it and flip them till they turn crispy and golden in color.
  9. Take them out put it on an absorbent paper and enjoy it with ketchup :-)

Pokemon palak Paneer

Pokemon palak Paneer

I'am not a green veggie lover :-( as kids doesn't like to have leafy vegetables me too is having the same choice ;-) but friends its not good to be like this!because we all know green vegetables are always good for eyes,skin and blood.
You must be wondering why i have kept this funny name for this dish, so its a story behind it .When my daughter refuses to eat palak i use to tell her that "if you want to become strong like pokemon i.e. her favorite cartoon then you have to eat this palak and by saying this she had it but only 2 to 3 spoons!So this is not being done for her good health :-( So it was challenge for me to give my daughter "health with taste"so i have tried a different taste for palak  paneer and it was a HIT :-)



The thick creamy gravy is going to be loved by all your family members and now even myself has started eating palak paneer  ;-)
Palak paneer is a good power pack for growing children as well as adults.Its good for weight loss,eye sight,healthy strong bones,lowers blood pressure and most important boosts immunity.
So as winters have come and you will be getting spinach in a huge bulk ,so you should start including this in your diet and become "pokemon" hahah! Jokes a part but its a must try recipe specially for the kids who hate palak ,because it is creamy ,tangy and flavored !So they will never say NO to this.



So here goes the recipe -

Ingredients -

  1. Palak (spinach)-1/2 kg (for 3 to 4 people)
  2. Paneer cubes - 150 grams
  3. 3 tomatoes(cut in small cubes)
  4. 2 onions ( roughly chopped )(not finely chopped)
  5. Garlic- 7 to 8 cloves
  6. Ginger - 1/2 tsp
  7. Green chilies - 4 to 5 (optional)
  8. Yellow salted butter - 1 tsp
  9. Fresh cream or malai -2 tsp
  10. Refined oil - 2 tsp
  11. Salt as per taste
  12. Cumin Seeds - 1 tsp
  13. Red chili powder -1 tsp
  14. Coriander powder - 2 tsp
  15. Turmeric powder -1/2 tsp
  16. Dry mango powder - 2 tsp
  17. Sugar - 1 pinch

Method -
  1. Firstly take the spinach cut its stems and wash it very properly.
  2. Then take a pan add water and boil the spinach for 10 to 15 minutes.
  3. After that take out the palak and strain its water and again wash it and strain the water and let it cool down.
  4. Then grind the palak in a mixer grinder.
  5. Now take a pan add oil in it.Let it heat.
  6. Take green chilies ,ginger and garlic and make a paste of it.
  7. Now in the oil add cumin seeds and the paste.
  8. Stir it for few minutes and add onions in it.
  9. Stir it till the onions starts turning little pink in color.
  10. Now add tomatoes in it.
  11. Mix it.
  12. After that add sugar,turmeric powder,red chili powder,coriander powder,salt,dry mango powder.(I hope i haven't any masala mentioned above  ;-)
  13. Now stir it very well till the tomatoes turns very soft and just mash it properly with the help of a flat spoon(kadchi) 
  14. Now add palak puree in it and roast it for 15 minutes on slow flame.
  15. Add butter in it.
  16. When the palak is totally mixed up add fresh cream or malai in it .
  17. Stir add till the gravy becomes thick.
  18. Lastly add paneer cubes and enjoy your Pokemon Palak Paneer .
  19. Serve it with hot steaming rice or paranthas :-)

Winters are on its way and and we will be getting a great variety of veggies as my favorite peas (matar) is on my plate!
This is a total vegetarian dish but for non veg lovers its gives a close taste to your non veg keema!These are soya granules cooked in thick creamy gravy. Soya is rich in protein as it improves the hair growth and gives a good volume!Soya is also very good for growing children but kids normally don't like to eat this,but this type of make of granules your kids are going to love this because its tangy,spicy and creamy.


This makhani keema matar you can enjoy this with hot parantha or easy bread :-) The thick gravy just got absorbed in the soya and when you take a bite it gives a succulent creamy taste .
Soya comes in chunk form also but i find granules more tasty and with the combination of peas i just love it...
So no more wait for this yummy recipe -


Ingredients -

Firstly take the granules around 1 cup and boil them in a pan by adding 1 pinch of salt and then strain it with fresh running water and squeeze the water.
  1. Onions - 2 medium sized(grinded)
  2. Tomatoes - 3 to 4 medium sized(grinded)
  3. Peas - 150 grams
  4. Garlic - 1/2 pod(finely chopped)
  5. Refined vegetable oil - 2 tbsp
  6. Cumin seeds - 1 tsp
  7. Salt as per taste
  8. Coriander powder-1 tsp
  9. Mango powder- 1 tsp
  10. Turmeric powder - 1/2 tsp
  11. Red chili powder - 1 tsp (as per your taste)
  12. Sugar - 1/2 tsp
  13. Milk - 1 cup(small one)
  14. Fresh Malai or cream - 2 tbsp

Method -

  1. Take a wok add oil and heat it up.
  2. Add cumin seed and garlic in it.
  3. Now stir it for few minutes.
  4. Now add onion paste in the oil and stir it till it changes its color.
  5. After that add tomato paste and add salt,sugar,coriander powder,mango powder,turmeric powder,salt and Red chili powder in it.
  6. Mix it well till the masala starts turning golden in color and starts leaving the oil.
  7. After that add peas in it.Roast it well with masala.
  8. Add half cup of water in it.
  9. Stir it till the gravy becomes little thick.
  10. Now add some milk in the gravy.
  11. Then add fresh malai in it.
  12. Wait for a nice boil.
  13. Now in the last when you will find the gravy has cooked up add soya granuels in the gravy.
  14. Now stir the gravy till it gets absorbed in the granules.
  15. Enjoy it with paranthas or bread.
