No Churn-No Flame-Hassle Free Mango Kulfi
Summer Season of mangoes is on,so give a try to this kulfi and get a relief from this scorching heat!
I always love to have mangoes in summers and this time i got good amount of gifted mangoes from my relatives,you must be thinking that "how lucky I am ;-D .So loads of mangoes and my foodie daughty asked for mango Popsicles,but i was not in a mood to face my gas stove,because of heat in the kitchen :-( but i can't say No to my daughter also,so i have given a try to these No Flame Mango Kulfi. A quick solution to beat the heat without coming near to heat in your kitchen.


I have added very few ingredients in these kulfis,so it will be very convenient for everyone to make them.These mango kulfis were very much similar to market bought mango popsicles but to give a real flavor of kulfi i have added some green cardamom also.
Home made ice creams are always the best because they are made up from pure milk and they are without any added preservatives .I have used Dussheri Mangoes as they are only sweet not sour in taste.
So before the mango season gets vanish,try out these yum creamy Mango Kulfi. Here goes the must try recipe-


Ingredients -
For 4 Kulfis

  1. 1 big sized Dussheri Mango(cut it into small pieces)
  2. 4 tbsp Condensed milk(you can decrease or increase the quantity according to your sweet tooth)
  3. Milk - half cup(small one)
  4. Green cardamom 3 pieces (crush them and discard its outer peel)


Method

  1. Take a blender and add mango pieces,milk,condensed milk and cardamom powder and give a good blend.
  2. Take your popsicle mould or you can also choose kulfi shaped aluminium moulds also.
  3. Pour the blended mix in your moulds and freeze it for 7 to 8 hours.
  4. After 8 hours take them out.
  5. Take a pan filled with water and heat up the water for 2 to 3 minutes and dip your moulds in that water.
  6. Start demoulding the kulfis.
  7. Enjoy your Cool Cool Mango kulfis :-)

Wheat Mathri
Mathri is one of the best and prominent snack which is preferred with tea.Specially we Indians love to have some munchies with our cup of chai ;-) and mathri is the most fancied choice.
Mathri is normally made up of all purpose flour which is available in stores but APF is not good for health,specially when its in fried form.This mathri is deep fried but it is made up of whole wheat and semolina(Suji)and its very much better than store bought because it is hygienic and fried in our regular refined oil which we use for our daily cooking.



  I have added some light spices also to make this mathri more tasty. Some people like sweet mathri also but i use to buy sweet mathri specially on Indian festival " karvachauth".But normally i don't like to eat sweet mathri I always prefer salted one.
This Mathri is crunchy and the mild flavor of spices adds a yum flavor to it.This is a perfect crunchy munchy option for your evening tea and you can also take this with your morning tea also as its gives a good filling to your empty stomach.


Sometimes we do get sudden craving to eat something specifically in evening but we do not want to opt for roti or sabzi ,so having this mathri is an appropriate decision to control our hunger pangs :-)So try out this recipe which is the best option for snacking-

Ingredients -\

  1. Wheat flour - 1 cup(200 grams)
  2. Semolina - 1/4 cup
  3. Carom seeds- 1 tsp
  4. Cumin seeds - 1/2 tsp
  5. Crushed black pepper powder - 1/3 tsp
  6. Salt as per taste
  7. Oil - 1/4 cup
  8. Oil for frying



 Method -

  1. Firstly sieve the wheat flour and semolina once to avoid impurities.
  2. Take a bowl add flour,semolina,salt,pepper powder,cumin seeds and carom seeds and oil.Mix it well.
  3. Now add water gradually to knead a dough.
  4. The dough should be little stiff for making crunchy mathri.
  5. Now cover the dough with a cloth and keep it for rest for 10 to 15 minutes.
  6. After 15 minutes knead the dough again,if you will find your dough little hard then add little water if needed.
  7. Heat up the oil in a wok.
  8. Now start making balls from the kneaded dough,flatten with your palms and place it on a rolling board(chakla)and roll out in about 2 inch thick round diameter.
  9. Take a fork and prick the rolled mathri from both the sides.
  10. Now deep fry the mathri,till they turn golden brown in color.
  11. Keep the mathri on an absorbent paper and get it cool down.
  12. Enjoy your Wheat Mathri with tea.

Baby Corn is a low calorie vegetable,as it has a same calorie content to other non-starchy vegetables such as broccoli,green beans etc.Baby corn is rich in fiber,which is good for your stomach.
You can cook various dishes with this vegetable but i have made it in a starter form,which is just perfect for your kid's parties or any get together.



As summer vacations are on and kids always want to eat something according to their taste and i think this is a big task specifically for mommies to decide what to make for them.so this is a great solution for our kids as they will eat vegetable also.
These fritters are specially for kids when they come home after playing or when they are studying in evening,so to refresh your munchkins and give them energy you must try this recipe.I am very much sure that your kids are going to love this.
These baby corn fritters are crunchy and yummy too.You can enjoy them with ketchup or your any favorite dip.
I have enjoyed these fritters in my Sunday special dinner with some butter toasted bread and some chips ;-)
So here goes the most wanted recipe for kids -



Ingredients -

  1. Baby corn (1 packet)
  2. Cornflour powder - 2 tbsp
  3. All purpose flour - 1 cup
  4. Salt as per taste
  5. Red chili flakes - 1 tsp
  6. Black pepper powder -1/2 tsp
  7. Oregano flakes as per your taste
  8. Oil for frying
Method-
  1. Take baby corn wash them and make them dry with a kitchen towel and cut them from between (make it half)
  2. Now take a bowl add cornflour,all purpose flour and add salt,pepper powder,red chili flakes and some oregano and mix it with a dry spoon.
  3. Take a glass of water and add it in the flour.
  4. Add the water gradually to avoid lumps.
  5. The batter should neither be thick nor watery.
  6. Now take a wok add oil and heat it up.
  7. Take 4 to5 baby corns and coat it with the batter and deep fry them.
  8. Flip when the baby corn starts changing its color.
  9. Take an absorbent paper and keep the fried baby corn on it.
  10. Your delicious crunchy Baby Corn Fritters are ready to enjoy with your favorite dip.
