Veg Chocolate Cake(No butter cake)

This is a vegan cake which is egg free and butter free!So no need to worry about your weight!This cake is really soft and you cant even think by its taste that it is without butter :-)
I'am a chocolate hard core lover and this cake is near to my heart because the chocolaty flavor is rich and just melts in your mouth!



This chocolate cake is tender and you can enjoy this with tea or coffee or as a dessert.After having this cake you would definitely say mmmm.... :-)
The magic ingredient i have used in this cake is easily available is your house and it will give exactly the taste of your favorite chocolate cake available in the market!



So weight watchers health conscious people this recipe is specially for you ;-) 
You can have this yum choco cake without any tension!!
So here goes the tasty recipe of veg chocolate cake-

Ingredients -

  1. Warm water - 1 cup(lukewarm)
  2. Unsweetened cocoa powder - 1/2 cup
  3. All purpose flour - 1 1/2 cup
  4. Castor sugar - 1 1/2 cup
  5. Baking soda - 3/4 tsp
  6. Salt - 1 pinch
  7. Refined oil - 1/2 cup
  8. Vanilla essence - 1 tbsp
  9. White Vinegar - 2 tsp


Method -

  1. Take a bowl ,add cocoa powder and add lukewarm water and whisk it properly (try to avoid lumps)
  2. Now take another bowl add flour and baking soda and sieve it once.
  3. Now add sugar and salt in the dry ingredients and mix them well.
  4. Preheat the oven at 200 degree Celsius for 10 minutes.
  5. Now make a well in the center of these dry ingredients and add the cocoa water mix ,oil and vanilla essence .
  6. Whisk till it gets smooth.
  7. Now add vinegar and whisk again.
  8. After this transfer the batter in a cake tin by greasing it with some oil and bake it for 30 to 40 minutes at 180 degree Celsius.
  9. Once the cake is baked ,check it with a skewer and place the cake on a wire wrack for around 15 to 20 minutes.(be patient)
  10. After the cake cools down take it out from the tin and cut it into slices.
  11. Enjoy your veg chocolate cake .

Pyaz ki kachori

Diwali festival is around the corner! As we all know that in this upcoming festive week our relatives,friends and neighbors will be coming to our house for giving gifts and wishes,so we normally buy some snacks like kachori,namak pare,matthis from market.But this time i have thought to make some salted snacks at my home to make our guest feel that they are special to us :-)



I remember my nani /dadi they used to make home made sweets and salted snacks on the occasion of diwali and holi and when we go to there house,they used to serve the home made namkeen and sweets and pack a dabba also for our house!
When we used to refuse for this she used to say "its home made and made up of  pure ghee"Yes ! she was right the home made taste is always the best :-)



These kachoris are really delicious as the masala of onions is spicy,sweet and tangy.I have made these kachoris for my guests !What about you?
So here goes the chatakedaar recipe of Pyaz ki Kachori-

Ingredients -
For Dough

  1. All purpose flour - 2 cups
  2. Ghee (i have used desi ghee)-2 tbsp
  3. Salt as per taste
  4. Ajwain - 1 tsp(optional)
For Stuffing-
  1. Chopped Onions - 3 medium sized
  2. Grated ginger - 1 tsp
  3. Fennel powder- 1 tsp
  4. Turmeric powder- 1 tsp
  5. Coriander powder - 2 tsp
  6. Carom seeds - 1 tsp
  7. Red chili powder as per taste
  8. Dry mango powder - 2 tsp
  9. Sugar - 1/2 tsp
  10. Salt as per taste
  11. Rasins - 7 to 9 pieces
  12. Cashews (finely chopped)-5 to 7 pieces
  13. Oil or ghee for frying


Method-

  1. Firstly take a bowl add Apf in it ,add salt and mix it well.
  2. Now add ghee 1 tbsp in it.
  3. Add water gradually in it and start kneading the dough.
  4. Add rest of the ghee and knead a soft dough.
  5. Not too soft neither too hard.
  6. Keep the dough for rest by covering it with a damp cloth and keep it for 30 minutes.
For stuffing
  1. Take a wok add 1 tsp oil in it.
  2. Now add cumin seeds .
  3. Add chopped cashews and fry them for 1 to 2 minutes.
  4. Add onions and ginger in it.
  5. Now add all the dry masalas turmeric ,salt,coriander powder,mango powder,fennel powder,sugar,red chili powder and mix it well.
  6. When the masala has mixed up properly add raisins in it.
  7. Now turn off the flame and let the masala gets cool down.
Now take the dough and divide it in small balls and make its small chapati like we make for puris.
With the help of a roller pin make thin round shape.
  1. Take a wok add oil or ghee whichever you prefer and let it heat up properly.
  2. Now take 1 circle and fill the center with 1 to 2 tsp of onion stuffing and start folding it by taking the edges of the circle.
  3. Now seal the edges like making a potli.
  4. Make more kachoris like this and deep fry them.
  5. Fry them till they turn golden brown and keep them on an absorbent paper.
  6. With the left over dough i have made plain namak para also.
  7. Your home made pyaz ki kachori is ready to enjoy!

My daughter is not fond of Aloo Gobhi,she always make bad faces when she gets to know that i'am going to make this vegetable for lunch or in her tiffin  :-( 
One day i tried some different way to cook this Aloo Gobhi and when she came back from her school,she asked me what i have made for lunch,i did not answered her that time ,because i knew her reaction.
So when i have served her lunch with this sabzi ,she said its really tasty and asked for more :-) Cool Na!
She liked this vegetable very much and told me to make it for her Tiffin Box !
A great feeling that your kid has started eating those vegetables which she doesn't want to see even!



The aroma of fried cauliflower and its beautiful fragrance is just awesome.Even i also liked this style of making aloo Gobhi.
You can serve this vegetable in kids tiffin also best accompanied with paratha or puri .This yum yum Aloo Gobhi is now everyone's favorite in my house :-)



  Here goes the tasty recipe of My Tiffin Aloo Gobhi-

Ingredients -

  1. Cauliflower - half kg(cut it in a normal medium size  wash it and strain)
  2. Potatoes - 3 to 4 medium sized(in small cube size)
  3. Onions - 2 medium sized(thinly sliced)
  4. Tomatoes - 3 to 4 medium sized(finely chopped)
  5. Garlic - 5 to 6 cloves(crushed)
  6. Ginger - 1/2 tsp (grated)
  7. Cumin Seeds - 1 tsp
  8. Red dry chili - 2 to 3 (optional)
  9. Red chili powder as per taste.(you can skip if your kids doesn't have)
  10. Turmeric powder - 1 tsp
  11. Dry mango powder - 2 tsp
  12. Coriander powder - 1 tsp
  13. Salt as per taste
  14. Sugar - 1/2 tsp
  15. Oil for frying


Method -

  1. Firstly take a wok add 5to 6 tbsp oil in it,let it heat properly.
  2. Then add cauliflower and deep fry it.
  3. Fry it till it changes the color ( do not over fry it)
  4. Then taken the cauliflower out and keep it in a bowl.
  5. After that take the potatoes and fry them in the same oil.
  6. Fry it till they turn little golden in color.Take them out and keep aside.
  7. Then take out some excess of oil from the wok and just keep around 2 tbsp in the wok.
  8. Now add cumin seeds and dry chilies in the wok.
  9. Add garlic and ginger also and fry it.
  10. Add sliced onions and fry them till it turns translucent in color.
  11. After this add chopped tomatoes and sugar in it.
  12. Now add all the dry masalas in it.
  13. Stir it and mix the masala very well.
  14. Now when you will find that the masala is incorporated very well then add the fried gobhi and aloo in the masala.
  15. Mix it very gently,so that the cauliflower should not break.
  16. Lastly you can sprinkle some more coriander powder and dry mango powder for a tangy and flavorful taste.
  17. Your Aloo Gobhi is ready to be packed in your kids Tiffin Boxes :-)

Spicy Stuffed Cheesy Garlic Bread

I'am really happy today,as it was my first attempt of making fresh home made bread.I was really scared to try the baking technique in making bread for the first time.But it was a real fun!as the result was really fruitful :-) 
Normally we buy these type of breads from our favorite food outlets,but these breads has got a particular flavor,i mean they are not spicy at all!But this garlic bread is spicy ,tangy and creamy also.




This stuffed bread was just loved by my family members and specially by my kid.
As you all know i myself is a big cheese lover ,so this is my favorite recipe now.
This cheesy garlic bread is not very crispy from outside but it has got a perfect texture of bread.
The flavor of garlic and herbs adds a beautiful flavor to the taste buds.
You can enjoy this bread with hot coffee or chilled soft drink as its your choice,as i have enjoyed it with my Tea :-)




So here goes a must try recipe for the beginners who have just started there baking skills!They can easily make this bread .

Ingredients -

  1. Dry active yeast - 1/2 tsp
  2. Luke warm water - 1/2 cup
  3. Sugar - 1/2 tsp
For Dough-
  1. All purpose flour - 1 cup
  2. Salt as per taste
  3. Refined oil - 1 tbsp
  4. Oregano flakes - 1 tsp
  5. Garlic finely chopped - 5 to 6 cloves
  6. Semolina - 1 tsp ( we are not going to mix it in the dough initially)
For stuffing-
  1. Boiled american corns - 2 tbsp
  2. Mozzarella (shredded)Cheese - 1/2 cup
  3. Chili garlic sauce for spreading - 2 tsp
For sprinkling dry masala
  1. Oregano flakes - 1/2 tsp
  2. Chili flakes - 1/2 tsp
  3. Pepper powder - 1 pinch
  4. Dry mango powder- 1/2 tsp
  5. Onion powder - 1/2 tsp
Butter around 1 tsp for the glaze and flavor


Method -
  1. Firstly take a small bowl add yeast in it,now add warm water and sugar in it and mix it well with a spoon.
  2. Keep it aside for 10 minutes in a warm place.
  3. Now take another bowl add APF in it and add some garlic pieces in the flour.
  4. Then add salt and oregano and mix it well.
  5. After that make a well in the center of the flour and add the concoction of yeast in it.
  6. Then add the refined oil also in between.
  7. Now time to use your hands.Knead the dough properly for around 10 minutes and make it in round shape of a ball.
  8. After that take a bowl grease little oil in it and keep the dough ball in it for at least 1 hour.
  9.  Cover the bowl with a cling film and keep the bowl in a warm place.
  10. In the mean time take all the dry masalas and mix them together and keep aside.
  11. Now take american corns boil them,strain it and keep aside.
  12. Get ready with your shredded mozzarella cheese also.
  13. After 1 hour, pre heat the oven for 10 minutes at 180 degree.
  14. Now take your dough out from the bowl and knead it again.
  15. Take some semolina and knead it with the dough .
  16. Knead it for around 7 to 8 minutes by punching it.
  17. After that take a roller and make a thick round shape like a pizza base.
  18. Then spread chili garlic sauce on the roll and add corns and cheese on the half side(because you have to fold it )
  19. Now fold the base and seal its sides properly,you can apply some water at the ends.
  20. Take the melted butter and brush it on the folded base.
  21. After that make small slits on the base with the help of a knife.  
  22. Time to sprinkle your dry masala on the top.
  23. Keep the base gently on a baking tray and bake it at 200 degree for 20 to 25 minutes.
  24. After 25 minutes ,let it cool down and its ready to enjoy.

Sunday Special

Sunday Special

This Sunday After having my dinner ,I was badly craving for Meetha!As we have chosen an ice cream parlour and there we had Sunday special ice cream.After that when i came back to home,again i got a craving for sweet :-(
Now what?So i just checked my refrigerator and finally got a solution for it!
So I made this tempting ,healthy and fully satisfactory Sunday Special Ice cream.As you can easily make this at home by making it more nutritious as well as tasty.

  
This Sunday Special Ice cream you can have it any time ,i mean not only on Sundays ;-) This Ice Cream is very healthy for our kids because it contains fruits as well as nuts.
I'am very much sure that nobody is going to deny this ice cream!





 As normally we go to expensive Ice cream parlours and we spend lot of money for our sweet cravings,But the drawback is that these ice creams are too costly and it acts as "A drop in the ocean" ,means the quantity we get is sometimes not satisfying.
As at home we can make this ice cream and can have in a huge quantity!
So here goes the sweet recipe of Sunday Special -

Serving - for 1 glass
Ingredients -

  1. Vanilla Ice cream - 1 cup
  2. Fresh pineapple - 2 tsp (cut it into thin long size in small pieces)
  3. Walnuts - 1 whole (finely chopped)
  4. Choco Chips - 1 tsp
  5. Tutti Fruity - 1 tsp
  6. Strawberry Syrup  (for drizzling) 



Method -
  1. Take a glass drizzle some strawberry syrup on it.
  2. Now add few pineapple pieces in it.
  3. Then scoop out the vanilla ice cream and put it in the glass.
  4. After that add chopped walnuts in it.
  5. Then add choco chips and tutti fruity in the ice cream.
  6. Add one more scoop of ice cream and drizzle some more strawberry syrup on the top.
  7. lastly garnish the ice cream with the leftover pineapple pieces.
  8. Enjoy your Sunday Special at home :-)

Bhavnagri Mirch

Bhavnagri mirchi are stuffed with gram flour and dry masalas .It is also known as Bharva Mirchis .Its very famous in Gujarat, Maharashtra and Rajasthan.
This Mirchi is not at all bitter or teekhi in taste,these are mild and tangy!The flavor of  roasted gram flour is really different as it gives a crunch in every bite and the most important is that they are not deep fried.
You can have this Mirchi with Paranthas as well it goes specially with Arhar ki daal and Rice...mmmm ,my mouth has started watering :-)



When i have cooked these Mirchis ,my daughter has started eating any kind of pulses now,because with rice and daal combo it adds a taste in your food.
In India we Indians are really crazy for condiments whether its a 
Dhaniya pudina chutney,Aam ka achar or some onions with lemon means we always look for some tanginess and spice in our daily meals, so this mirchi is definitely going to add colors in your food! 



So here goes the Mouth watering recipe of Bhavnagri Mirch

Ingredients -

  1. Mirchi - 200 grams (wash these mirchi ,dry them with a cloth and make a slit in the center and if you want you can de-seed it ,but i haven't done that)I have made with seeds.
  2. Fennel powder - 2 tsp(you can take moti saunf i.e fennel seeds and grind them)
  3. Cumin Seeds - 1 tsp
  4. Coriander powder - 2 tsp
  5. Dry mango powder - 2 tsp
  6. Red chili powder - 1 tsp
  7. Salt as per taste
  8. Asafoetida - 1 1/2 pinch
  9. Gram flour (besan)-1/2 cup
  10. Lemon juice - 2 tsp
  11. Turmeric powder - 1 tsp
  12. Oil 4 to 5 tbsp

Method -
  1. Take a pan add 2 tbsp oil ,heat it up.
  2. Add cumin seeds and asafoetida and let it crackle.
  3. Once the cumin seeds is roasted add turmeric powder and gram flour in it.(keep it on medium flame now)
  4. Roast and stir till the gram flour starts changing its color.
  5. Stir continuously to avoid burning of gram flour.
  6. Now add fennel powder,salt,coriander powder,red chili powder,dry mango powder and turn off the flame.
  7. Now add lemon juice and mix it well.
  8. Let the masala cool down.
  9. Now take the mirchi and stuff them with masala.
  10. Take a pan add 2 tsp oil and place the chilies in the pan .
  11. Cover and allow them to cook for 3 to 4 minutes on a low flame.
  12. Check the chilies after 4 minutes and flip them.
  13. After turning them ,again cover the pan and cook for another 3 minutes.
  14. Your Bhavnagri Mirchi are ready to enjoy!

Matar Paneer! Is one of the first preferences for the vegetarians when you choose a dinner or lunch in restaurants.This matar paneer is a tried and tested recipe which you can make in your own kitchen and they would definitely say that"when you have ordered it?"
The aroma of home made masala and taste its just everyone is going to love it.I have not added any special paneer masala ,its made up of simple spices which are easily available in the kitchen.


Paneer is a rich source in calcium and proteins and it helps to give you instant energy and a power to fight with bone related problems. Paneer is also very beneficial for strong teeth.
On the whole paneer is a power pack choice for growing children as well as adults.
Now you don't need to spend your money in restaurants for your favourite Matar paneer as you are definitely going to enjoy this at home!
You can enjoy this matar paneer with hot steaming rice or roti.




So here goes to yum yum healthy recipe for this Matar paneer!

Ingredients-

  1. Matar (green peas) i have used frozen - 100 grams(firstly boil it for 10 to 15 minutes and then strain the water)
  2. Paneer - 200 grams
  3. Onions - 2 medium sized(grinded)
  4. Tomatoes - 3 to 4 medium sized(grinded)
  5. Garlic - 1/2 pod(finely chopped)
  6. Ginger - 1 tsp(Grated)
  7. Refined vegetable oil - 2tbsp
  8. Tej patta- 1 leaf
  9. Cumin seeds - 1 tsp
  10. Red dry chili-2 to 3
  11. Salt as per taste
  12. Coriander powder-1 tsp
  13. Mango powder- 1 tsp
  14. Turmeric powder - 1/2 tsp
  15. Red chili powder - 1 tsp (as per your taste)
  16. Sugar - 1/2 tsp
  17. Milk - 1/2 cup(small one)
  18. Fresh Malai or cream - 1 tbsp
  19. Salted Butter - 2 tsp

Method -
  1. Take a wok add Oil in it let it heat up.
  2. Add cumin seeds,tej patta,dry red chilies and ginger garlic in it.
  3. Now stir it for few minutes.
  4. Now add onion paste in the oil and stir it till it changes its color.
  5. After that add tomato paste and add salt,sugar,coriander powder,mango powder,turmeric powder,salt and Red chili powder in it.
  6. Mix it well till the masala starts turning golden in color and starts leaving the oil.
  7. After that add peas in it.Roast it well with masala.
  8. Add half cup of water in it.
  9. Stir it till the gravy becomes little thick.
  10. Now add some milk in the gravy.
  11. Then add fresh malai in it.
  12. Wait for a nice boil.
  13. Now in the last when you will find the gravy has cooked up properly ,then add the paneer cubes in it.
  14. Now lastly add salted butter in it.
  15. Your Matar Paneer is ready to enjoy with hot steaming Rice or Chapaties.
