Vegetable crispy

This vegetable crispy is one of my kid's favorite recipe.Kids are the most fussy eaters and to make them eat the veggies is the most difficult task for the mothers,but do not worry.This vegetable crispy is the best option for the kids,who hate vegetables on their plates,as this dish is crispy,tangy,spicy and chatpata!So kids can't deny for this yum yum recipe.
I have added few variety of veggies,but you can add more according to your choice.This vegetable crispy is a quick recipe that you can make for your evening snacks or for birthday parties or any kind of  get together at your home.


The crunchiness of the broccoli and baby corns is so tasty that you cant stop yourself from eating,but you are definitely going to put on your weight ;-) But sometimes we should enjoy this fried snacks without any guilt. 
Earlier when i used to go to the restaurants i just love to order this vegetable crispy as a starter,this was my first preference to have this crunchy munchy snacks.But now i can make this for my family and me at home only!
The ketchup and the spicy garlic sauce poured over on the fried vegetables adds a sweet and spicy flavor.So no more wait for this tasty recipe here it goes -


 Ingredients-

  1. 8 to 10 button mushrooms(halved)
  2. 1 green capsicum(in square shape)
  3. 6 to 8 baby corns(diagonally sliced)
  4. 1 medium sized broccoli(cut it in small florets)
  5. 1 medium sized raw potato (sliced)
  6. 3 tbsp cornflour
  7. 4 tbsp refined flour
  8. Black pepper powder-2 tsp
  9. Oil for deep frying
  10. Salt as per taste
For sauce -
  1. 1 tsp chopped garlic
  2. 2 tsp chili garlic paste
  3. 2 tsp tomato ketchup
  4. 1 tsp white vinegar
  5. 1 tsp Red chili powder (optional)
  6. 1 Onion thin round sliced 
  7. 2 to 3 Green chilies(chopped)(optional) 
  8. Salt as per taste
Recipe -
  1. Firstly take all the vegetables in a bowl and mix 1 tbsp refined flour in it.Rub it well on the veggies add a pinch of salt and keep aside for 10 minutes.
  2. Now take another bowl add apf ,cornflour powder,salt,pepper powder and water,Whisk it properly to avoid lumps and make a smooth paste like we make for the pakora batter.
  3. Then take a wok add oil in it (for deep fry)
  4. Dip one by one all the veggies in the batter and deep fry in batches.
  5. When the veggies turn crispy and fried take them out and put them on an absorbent paper.
  6. Now take another wok add 1 tsp oil.Heat it up.
  7. Add onions,chopped garlic and green chilies in it.
  8. Saute it for few minutes.
  9. Now add chili garlic and tomato ketchup in it.
  10. Stir it nicely add salt,chili powder and vinegar in it.
  11. Your sauce is ready.
  12. Now take the bowl of your fried vegetables and pour the sauce on it and mix it gently.
  13. Your Vegetable crispy is ready to enjoy.

Vegetable Tehri

Vegetable Tehri
Tehri /Tahiri is a yellow rice dish in Awadhi cuisines.It is normally made on lazy Sundays.A one pot dish,which is very easy and quick to cook.Its the most comfort,soulful and humble food ,that everyone can enjoy,specially in winters as well as in summers also.
This vegetable tehri dish is yellow in color because of turmeric,and you can add any kind of vegetable as per your choice.
This vegetable tehri is normally found in U.P(Uttar Pradesh)and its popular to be named as tehri not as pulav.


You can enjoy this vegetable tehri with pickle,lemon or chutney.
Its a beautiful comfort dish to opt ,when you are not in a mood to cook,because its yummy and hassle free to make.
The aroma of spices added in this tehri makes the rice more flavorful.
So here goes the recipe of Vegetable Tehri-


Ingredients-

  1. 1 and 1/2 cup Rice soaked in water for at least 1 hour.
  2. 1 thin sliced onion
  3. 3 to 4 tomatoes (roughly chopped)
  4. 1/2 a cup green peas
  5. 2 carrots (finely chopped)
  6. 2 to 3 chopped green chilies
  7. 1 tsp cumin seeds
  8. 3 to 4 cloves
  9. 1 to 2 bay leaves
  10. 1 tsp turmeric powder
  11. 2 to 3 dry red chilies
  12. 2 tsp coriander powder
  13. 2 tsp dry mango powder
  14. 2 tsp red chili powder
  15. salt to taste
  16. 1/2 tsp sugar
  17. 1 inch piece of grated ginger 
  18. 4 to 5 cloves of garlic(finely chopped)
  19. 2 tsp Fresh lime juice 
  20. Oil 3 tbsp
  21. Fresh chopped green coriander for garnishing.
  22. Maggi masala to be sprinkled on the top (optional)

Recipe-
  1. Firstly take a wok add oil and heat it up.
  2. Add cumin seeds,bay leaves,ginger,garlic,cloves and dry red chilies.
  3. Saute it for few minutes.
  4. Now add onions and fry them till they turn translucent in color.
  5. Now add the tomatoes,peas,green chilies and carrots .
  6. Add sugar and all the dry spices.(turmeric powder,coriander powder,salt,dry mango powder and red chili powder)
  7. Stir the veggies properly,till they turn soft and starts leaving oil.
  8. After this take your soaked rice and add water around 2 cups and stir it nicely and cover it with a lid on a medium flame.
  9. After 15 minutes check the rice,if its done or under cooked.
  10. If it is under - cooked then keep it for more time.
  11. Lastly add lime juice and mix the tehri and switch off the flame.
  12. Serve the tehri by garnishing it with green coriander leaves and sprinkle maggi masala if you wish to add.
  13. Your Vegetable Tehri is ready to eat with curd or pickle.

Malai Kofta

Malai Kofta
Malai Kofta is a rich gravy with fried balls,which is normally served in marriages or functions and very much demanded in restaurants. Malai kofta gravy is an absolute delight for all the vegetarians as well as non-vegetarians.This dish is originated from Mughlai Cuisines.
Usually Malai Kofta consists of potatoes,but i haven't used potatoes in it,so its a healthy version with taste.
The rich and creamy gravy is without cashews,but no-one can say that,because the thickness and texture is just the same as,its with the cashews!You can also make shahi paneer's gravy with the same recipe.


 The fried balls are so yummy that my kid just gobbled them all ,before i could mix them up in the gravy. Haha!
These koftas are crispy from inside and very tender from inside.You can enjoy this Malai kofta with Naan,roti or hot steaming rice.
This is a must try recipe at your home get-together parties and even specially on weekends.I got a compliment from my Hubby,that the dish was"awesome",so if you also want to get this compliment from your family and friends,then do try out this creamy rich dish.


Ingredients-
For koftas

  1. 100 grams - paneer (cottage cheese)(grated)
  2. 1/2 a cup cabbage (shredded)
  3. 1/2 a cup finely chopped spinach
  4. 2 tsp finely chopped coriander
  5. 1 and 1/2 tsp cornflour powder
  6. Oil for frying
  7. 2 to 3 chopped green chilies
  8. Salt 1/2 tsp 
  9. Black pepper powder - 1 tsp
  10. 2 slices of bread
  11. Milk 2 tbsp
For gravy -
  1. Onions- 2 medium sized(roughly chopped)
  2. Tomatoes - 3 to 4 big sized (roughly chopped)
  3. Garlic cloves - 7 to 8 pieces
  4. Red dry chilies - 2 to 3(optional)
  5. Coriander powder - 2 tsp
  6. Turmeric powder - 1 tsp
  7. Red chili powder - 1 and 1/2 tsp
  8. Dry mango powder - 1 tsp
  9. Salt as per taste
  10. Sugar - 1/2 tsp
  11. Cumin seeds - 1 and 1/2 tsp
  12. Milk - 1/2 cup
  13. Fresh malai or cream - 2 tbsp
  14. Green coriander and cream for garnishing.

Method -
  1. Firstly take a wok and add your chopped spinach and grated cabbage in the wok and roast it for few minutes without any oil,just dry roast to get rid out of the moisture in the vegetables.
  2. When the moisture gets vanished,keep it aside and let it cool down.
  3. Now take a bowl add grated paneer,coriander leaves,green chilies,spinach and cabbage in it.
  4. Add cornflour also.
  5. Now take the bread slices and pour some milk on it .
  6. When the bread turn out to be soft and little wet,take out its sides,crumble the bread and mix it in the bowl.
  7. Add salt and pepper powder and mix the mixture very well with your hands and make a soft dough out of it.
  8. Now divide the dough into small portions and make  small round balls or long sized balls as per your choice.
  9. Now take a wok add oil and heat it up.
  10. Fry these balls till they turn golden in color and place them on an absorbent paper and keep aside.
For the gravy
  1. Take a wok add 1 tbsp oil and heat it up.
  2. Add cumin seeds and dry red chilies and let it crackle.
  3. Now add onions in it ,and fry them till they turn translucent in color.
  4. Now add garlic and tomatoes and stir them also.
  5. Now add salt,sugar,turmeric powder,coriander powder,red chili powder and mango powder and mix it well.
  6. Now add 1 tbsp of malai/fresh cream and mix it again.
  7. This process will take around 10 minutes.
  8. Now switch off the flame and let the masala cools down.
  9. When the masala perfectly cools down,grind it in the mixer grinder and make a paste.
  10. Now in the same wok add 1 tbsp oil,heat it up and add the tomato onion paste in the wok.
  11. Stir it till 2 boil comes up.
  12. Now add another 1 tbsp malai and milk in the gravy.
  13. Now after 2 to 3 boils,add little water in the gravy.(little water not a cup full of water)
  14. Lastly when the gravy  starts getting thicker add fried balls (kofta)in the gravy and switch off the flame.
  15. Garnish it with green coriander and cream.
  16. Your Malai Kofta is ready to enjoy.

Spicy Tomato Rice

Spicy Tomato Rice
Though i have tried many types of rice varieties like Zeera rice,Kala chana rice,Tamarind rice and many more,but this tomato rice is very simple and quick made dish.This tomato rice is spicy,tangy and full of aroma.You can have this rice without anything like curd or any pickle,because its having pungent fragrance which needs nothing to be in your plate.But i have tried this rice with with dahi ki sabji and fried mirchis.
You can make this rice for kids tiffin also and they will be happy to see this yummy dish in their lunch boxes.


I have added some caramelized onions on the top and some fried peas also ,which is giving an additional taste and crisp in every bite.
A must try recipe as a main course which you can have it in lunch or dinner or you can also enjoy this with your evening tea.
So here goes the recipe of Spicy Tomato Rice-


Ingredients -

  1. 4 to 5 medium sized Tomatoes.(roughly chopped)
  2. A bowl full of boiled rice.
  3. 1/2 a cup of green boiled peas.
  4. You can add paneer also(i haven't added)
  5. 1 tsp of chopped garlic.
  6. 1 tsp of chopped chopped ginger.
  7. 2 bay leaves.
  8. 1 tsp of red chili paste.
  9. 2 tsp of tomato ketchup.
  10. 1 tsp of cumin seeds.
  11. 1/4 tsp of turmeric powder.
  12. 2 tsp of coriander powder.
  13. 1 tsp of fresh lime juice.(optional)
  14. Green coriander leaves - for garnishing and flavor.
  15. Salt as per taste.
  16. Oil for frying.
For Caramelized onions -
Thinly sliced onions - 1 medium sized


Method -
  1. Take a wok ,heat it up and add 2 tbsp of oil.
  2. Add cumin seeds and bay leaves and let it crackle.
  3. Now add chopped garlic and ginger and saute it.
  4. Now take the tomatoes and add them in the wok.
  5. Now add red chili paste and tomato ketchup.
  6. Cook the tomatoes till they get soft and mushy.
  7. It will take 5 to 7 minutes.
  8. When you will find that all the moisture is gone means the tomatoes has started leaving oil,then its time to add all dry spices.
  9. Take Salt,turmeric powder,coriander powder and mix it well.
  10. Now add little water in it and stir for 2 to 3 minutes.
  11. After this add the main ingredient Rice in the wok and mix it gently,so that the rice should not break.
  12. Now take another wok add 1 tsp oil and add onions in it.
  13. Saute the onions till they turn golden brown in color.
  14. Now add boiled peas in it and fry them for another 1 to 2 minutes.
  15. Now in the ready rice mix these onions and peas and garnish it with coriander leaves .
  16. Lastly you can sprinkle some lime juice.
  17. Your Spicy Tomato Rice is ready to relish.

Chocolate Mousse With Strawberry Jelly

Eating Chocolate always keeps you happy!Yes chocolates reduces stress and it also helps to boost your mood.Specially dark chocolate boost the production of "feel good"chemicals called endorphins. It diminish the negative effects of stress.
I think chocolates are everyone's favorite and one can have it anytime ;-) and with a combination of strawberry jelly it added a refreshing taste.
This creamy mousse is eggless,very easy to make and definitely your family is going to love this dessert,if they are a hardcore chocolate lover.



This is perfect dessert if some unexpected guests comes to your house,because it takes very less time and less efforts without any hassle to serve it your guests.
But i have made this for my daughter and me only as a dessert to be served after the dinner!So here goes the yum yum recipe of chocolate Mousse with strawberry jelly.


Ingredients-


  • Fresh cream - 150 grams
  • Dark chocolate (chopped)-100 grams
  • I have used dark chocolate compound
  • Choco chips for garnishing
  • Strawberry jelly made from the powdered mix.
Method -

1.Melt the chocolate bars by using double boiling method or you can use microwave for 3 to 5 minutes to melt the chocolate.
2.Now take a bowl pour fresh cream in it add melted chocolate.
3.Mix well gently not too vigorously.
4.Take a serving shot glass or cups and pour the mix in it.
5.Keep in fridge for 30 minutes or till the mousse is set.
6.For the jelly follow the instruction on the jelly pack and keep the jelly in fridge for half an hour.
7.Now take out your mousse and place the jelly very gently on the set chocolate mousse and garnish it with choco chips.
8.Enjoy your yummy dessert.

kathal ki sabji

Kathal Ki Sabji
Kathal known as Jackfruit is a huge tree larger than a Mango tree. It is largely cultivated in the tropical regions of Indian subcontinent.
Kathal is now easily available in every city and its a very tasty option for those who are purely vegetarians.This kathal ki sabji is spicy,juicy and tangy.
Kathal is a good source of  potassium,magnesium and iron,this means its really good for kids as well as adults.This sabji is very easy to make and you can have this with paranthas or simple roti.



This sabji is my childhood's favorite sabji and now its my kids favorite also.So here goes the easy peasy recipe of Kathal ki sabji-



Ingredients -
  • Kathal Pieces - 1/2 kg(Peel and cut it into small pieces)
  • Oil for deep frying - 1 cup
  • Cumin seeds - 1 tsp
  • Onions - 2 medium sized (thinly sliced)
  • Tomatoes - 3 medium sized(chopped)
  • Green chilies- 1 to 2
  • Garlic - 5 to 6 cloves(finely chopped)
  • Salt as per taste
  • Sugar - 1/4 tsp
  • Red chili powder - 2 tsp
  • Coriander powder - 1 tsp
  • Dry mango powder - 2 tsp
  • Turmeric powder - 1 tsp
  • Fresh green coriander leaves - 2 tsp(finely chopped)for garnishing.

Method -
  • Firstly take a wok add 1 cup oil and heat it up.
  • Now take the small pieces of jackfruit and deep fry them.
  • When the pieces starts turning translucent in color take them out on an absorbent paper and keep aside.
  • Now take another wok add 2 tsp oil and add cumin seeds in it.
  • After that add onions,garlic and green chily and fry them.
  • When the onions starts turning pink in color add chopped tomatoes and mix it well.
  • Add sugar in it.
  • Stir it till the tomatoes become soft .
  • Now add salt,turmeric powder,red chili powder,coriander powder and mix it.(do not add dry mango powder now)
  • When the masala starts leaving oil add kathal pieces in the masala and again mix it.
  • Now add mango powder and green coriander leaves and mix it again.
  • Your Kathal Ki Sabji is ready to enjoy.

khajoor Chutney

Khajoori Chutney

Khajoor is also known as Dates,is a gift from nature and we must consume it specially in winters.As dates are too sweet and sometimes we don't feel like to have them,so here is a solution for it to try dates in a tangy,spicy and salty form as a yummy chutney.
Khajoor is known for it nutritive values like its good for those who are having iron deficiency,it reduces blood pressure and also gives us warmth and vehemence in our bodies.
Its really beneficial in promoting respiratory and digestive health.



This chutney goes very well with Aloo tikki - Papri Chats and with paranthas also.You can store this khajoori chutney in your refrigerator for at least one week.So here goes a must try recipe of the tempting khajoori chutney-



Ingredients -

  1. Khajoor (dates) - 8 to 10 pieces (De-seed them first and cut it into two pieces)
  2. Jaggery - 1 small piece
  3. Water - half cup
  4. Tamarind - half cup(soak the tamarind in little warm water for 10 minutes and take out its seeds and unwanted threads)
  5. Salt as per taste
  6. Cumin seeds - 1 tsp
  7. Red chili powder - 1 tsp (optional)
  8. Black pepper powder - 1 tsp
  9. Red dry chilies - 2 to 3
  10. Black salt as per taste

Recipe -
  1. Firstly take a wok add khajoor in it with half cup of water.
  2. Stir it till it gets soft(this will take around 10 minutes)
  3. Now add one piece of jaggery and mix it with the khajoor.
  4. After that take the tamarind pulp with its leftover water and pour it in the wok.
  5. Now add white salt in the pulp.
  6. Wait for 2 to 3 boils till the khajoor gets soft.
  7. Switch off the flame and let the mixture cool down.
  8. After it cools down,grind the mixture in a mixer grinder.
  9. Now take another wok add 1 tsp oil and add cumin seeds and red chilies in it.
  10. Now pour the grounded pulp in the wok.
  11. Add black salt,red chili powder and some pepper powder and mix it well .
  12. You can add water if it has become too thick otherwise no need.
  13. Now stir the pulp till it gets thick and mixed up properly.
  14. Your Khajoori Chutney is ready to enjoy with bhalla papri chat or with paranthas.

Cheese Potato Pancakes

Cheese Potato Pancakes

Happy New Year to all the foodie friends.Here comes my first post of Year 2017 i.e Cheese Potato Pancakes.As you all know Cheese is my first love <3 ,and potatoes are my crush,so how can i forget my first new year's post without these ingredients.
These pancakes are crispy outside and mushy inside.They are the best option for evening snacks or in your lunch also,you can have with crispy butter fried bread.
But i have made this for my small get together new year party at home and it was enjoyed by all of my friends,relatives and specially kids,as cheese is kids favorite ingredient.



This is an egg free recipe as mostly these pancakes are made from egg binding,but this is total vegetarian appetizer.So even vegetarians can also enjoy this recipe.
You can have these pancakes with your favorite ketchup or green chutney or with mayonnaise also.



So no more wait for this yummy recipe-

Ingredients -

  1. Mozzarella cheese(grate it )- 1 Cup
  2. Spring onions - 2 tbsp(finely chopped)
  3. Onions - 1 small sized(finely chopped)
  4. Potatoes - 2 big sized
  5. Cornflour powder - 2 tbsp
  6. Fresh Coriander leaves - 1 tbsp(finely chopped)
  7. Salt as per taste
  8. Freshly grounded black pepper - 1 tsp
  9. Oil - 2 tbsp (for frying)In non-stick pan.(if you are using a normal wok then need to add more oil for it)

Method-
  1. Firstly take the raw potatoes,peel them and grate it.
  2. Now squeeze the water from the potatoes and keep aside.
  3. Grate mozzarella cheese keep aside. 
  4. Take the finely chopped white and spring onions and mix it with the grated cheese and potatoes.
  5. Now add cornflour powder,coriander leaves,salt and black pepper powder and mix it very well.
  6. In the mean time start heating up your non stick pan by adding oil in it.
  7. After this take small portions of the mixture in your palm and make a patty shape from this(do it very gently otherwise it can break)
  8. You can pat some oil or water in your hand to avoid from breaking.
  9. Now take the pancakes and put them in the pan for frying.
  10. You can fry 3 to 4 pancakes in one batch not more than that ,because its little tricky to flip them.
  11. Now take a flat spoon and press it gently on the pancakes and let it turn golden brown.
  12. When you will find that one side is done,then flip it very gently.
  13. When your both the sides are golden and crispy,it means its done.
  14. Take your cheese potato pancakes out from the pan and put it on an adsorbent paper.
  15. Your crispy Cheese Potato Pancakes are ready to relish.
