Cheesy Fries Pizza
Weekend without pizza is incomplete :-P 
There is nothing better than pizza on Friday night. As baking becomes your stress buster and I just love to bake something for my family specially after hectic 5 days, hectic 5 days means the same simple cooking we all do in our kitchen and it becomes boring for me ,so to overcome these blue moods I love to try my hands on baking. Baking reduces your stress and works in changing your bad mood too. So last Friday night I have baked some crunchy based pizza with a heavy loaded toppings.


When I have served this pizza to my family ,on giving a look to it they said "Wow". This cheesy fries pizza base was crunchy from outside and soft inside and the crispy fries with melted cheese was really delicious, as it got vanished with in half an hour ;-)
Its a heavy loaded pizza with pure vegetarian toppings which includes corns, capsicum ,onions and potato fries. You can make your pizza non vegetarian also by adding shredded chicken pieces or nuggets too. but this pizza is total a vegetarian delicacy.
So try out this pizza on this coming Friday and make your weekend  interesting .


Ingredients-
  1. Dry active yeast - 1/2 tsp
  2. Luke warm water - 1/2 cup
  3. Sugar - 1/2 tsp
For Dough-
  1. All purpose flour - 1 cup
  2. Salt as per taste
  3. Refined oil - 1 tbsp.


For Toppings -
  1. Half cup boiled American corns
  2. 1 medium sized capsicum (thinly sliced)
  3. 1 medium sized onion (thinly sliced onion)
  4. Oil - 1 tsp
  5. Spices for veggies-
  6. Salt as per taste , tomato ketchup -1 tsp ,dry mango powder - 1/2 tsp and black pepper powder - 2 pinches
  7. French fries around 12 to 15 sticks I have used , you can add more or less according to your choice.
  8. Oil for frying the fries I have used frozen fries.(you can make the fresh ones also)
  9. Grated mozzarella cheese 1 cup.
  10. Oregano flakes - 1 tsp
  11. Pizza sauce - 2 tbsp.(for spreading on the base) 
  12. Red chili flakes - 1/2 tsp



Method -

Firstly take a small bowl add yeast in it, now add warm water and sugar in it and mix it well with a spoon.
Keep it aside for 10 minutes in a warm place
  1. Now take another bowl add all purpose flour and some salt and mix it well.
  2. After that make a well in the center of the flour and add the concoction of yeast in it.
  3. Then add the refined oil also in between.
  4. Now time to use your hands. Knead the dough properly for around 10 minutes and make it in round shape of a ball.
  5. After that take a bowl grease little oil in it and keep the dough ball in it for at least 1 hour.
  6.  Cover the bowl with a cling film and keep the bowl in a warm place.
  7. In the mean time take a wok heat it up and add oil in it. Add onions and sauté it for few minutes.
  8. Now add capsicum and boiled corns .
  9. Add Salt as per taste , tomato ketchup -1 tsp ,dry mango powder - 1/2 tsp and black pepper powder - 2 pinches
  10. Mix it well and switch off the flame.
  11. Take another wok add oil around 1 cup and heat it up.
  12. Put your fries and fry them till they turn crispy and take them out on an absorbent paper.
  13. Get ready with your shredded mozzarella cheese also.
  14. After 1 hour, pre heat the oven for 10 minutes at 180 degree.
  15. Now take your dough out from the bowl and knead it again.
  16. Knead it for around 7 to 8 minutes by punching it.
  17. After that take a roller and make a thick round shape like a pizza base.
  18. Prick the pizza base with the help of fork in the center and sides also.
  19. Keep the base gently on a baking tray.
  20. Now spread the pizza sauce on the base and spread the sautéed veggies also.
  21. Bake it for 20 minutes at 180 degrees.
  22. After 20 minutes check the base it should be more than half cooked.
  23. Now take the fries and spread it on the top of the layer of veggies.
  24. Spread grated cheese also and sprinkle oregano and chili flakes.
  25. Again bake it at 200 degrees for more 15 minutes.
  26. After 15 minutes take the pizza tray out and start plating your palatable Cheesy fries pizza.

vegetable maggi

Vegetable Maggi
Maggi yes I know its unhealthy but easy and almost everyone's favorite too. Actually I have made this few days back and loads of foodies demanded for the recipe,so I thought to share the recipe with you.
One evening my darling choosy daughter demanded for maggi and that day she haven't had any healthy meal, so firstly I strictly denied for this but you all know about kids they sometimes gets so stubborn. So what to do now :-(  Suddenly I got an idea to make maggi little healthier then I went to the kitchen and started looking for some vegetables.
Yeah ! a mom is always a master mind and she knows how to tackle the tricky situations ;-)
This Vegetable maggi is really tempting and you can also try this for your special Sunday breakfasts. This maggi is not meant for lazy days because its not cooked under 2 minutes :-P .So try out this vegetable maggi and enjoy it with your loving family and friends.


Are you tempted to see this bowl of  yumminess? Imagine a rainy day spent with the aroma of maggi...mm...mmm .Here goes the much awaited recipe for my dear foodie friends -

 Ingredients -

  1. Two packs of maggi instant noodles.
  2. 1 cup of boiled American corns
  3. 1 cup of boiled green peas
  4. 2 medium sized capsicum(thin sliced)(you can also add red and yellow bell peppers)
  5. 2 medium sized onions( finely chopped)
  6. 1 medium sized carrot(finely chopped)(I have used orange one)
  7. 2 Maggi masala taste maker which is inside the packets
  8. Oil -1 tsp
  9. Salt to be added as per taste because the taste maker contains all the spices but I wanted a mild spicy and tangy one so I have added some more spices.
  10. Red chili powder - 1/ 2 tsp (optional)
  11. Dry mango powder - 1/2 tsp
Method-

  1. Take a wok add oil and heat it up.
  2. Add onions and stir fry till they turn little pink in color.
  3. Now add capsicums,carrots,corns,peas and stir it well.
  4. Cook the veggies till they get little soft for around 2 to 3 minutes.
  5. Now add salt , red chili powder ,dry mango powder and mix it well.
  6. After this add 2 cups of water and add maggi in it.
  7. Add more water if needed otherwise skip the step.
  8. When you will find that your maggi is cooked up ,then lastly add taste maker in it.
  9. Stir it again for few minutes.
  10. Your yummy Masala Vegetable maggi is ready to enjoy.

Bombay Style Tawa Cheese Sandwich

As we all know how important breakfast is.Its the most important part of our meal in our diet.Morning meals keeps us energetic and happy through out the day,so we should never skip our breakfast.
My daughter is not habitual in consuming her breakfast at the time of going to school,so i prefer to give her a glass full of milk mixed up with bournvita ,some almonds and 1 digestive biscuit to fill her tummy and energy also.
But my husband is not too fond of taking breakfast,but i always try that before going to his workplace i would feed him something,as i told you breakfast is an important meal.So his habit is developed as he always takes his breakfast.Good Boy Na ;-) 
But sometimes we get bored of eating the same healthy breakfast like oats,cereals,paranthas or fruits.So on Sundays my family gets a break by eating these yummy Bombay Style tawa cheese sandwiches.Change is always good na?


These sandwiches are easy and quick to make.This sandwich is very much famous in Mumbai earlier known as Bombay.These sandwiches are filled up with the goodness of mashed potatoes and some spices.I have roasted the bread on tawa with some salted butter and this makes the sandwiches crispy and more tasty.You can also try grill method but i like this tawa roasted one method.You can also give these sandwiches in your kids tiffin and they would definitely love them.
In evening we feel little hungry so give a try to these Tawa cheese sandwiches with a hot cuppa of tea or coffee and some goodies like chips and cookies..sounds yum na :-D 
So here goes the crunchy crispy recipe of Bombay Style Tawa Cheese Sandwich-


Ingredients -

  1. Mashed Boiled potatoes - 2 potatoes
  2. Chopped onions - 1 medium sized
  3. Thin sliced capsicum -1 medium sized
  4. Bread slices 
  5. Butter - 1tsp
  6. Grated Mozzarella cheese to sprinkle on top of the sandwiches.
  7. Salt as per taste
  8. Dry mango powder - 1/2 tsp
  9. Cumin powder - 1/2 tsp
  10. Crushed black pepper according to your taste
  11. Chili flakes (optional)
  12. Oregano - 1 tsp

Method -
  1. Take the boiled potatoes and mash it properly.
  2. Add onions and capsicum.
  3. Now add salt,pepper powder,mango powder,cumin powder and mix it well in the mixture.
  4. Now heat up the tawa and put some butter on it.
  5. Now take one bread slice and spread the mixture evenly on the bread and cover the bread with another slice.
  6. Put the breads on tawa on low flame and roast it from both the sides.
  7. Now press the breads with a flat spatula gently to make them crispy.
  8. When you will find the bread has changed its color flip it to other side.
  9. Your sandwich is ready.Cut them from between.
  10. Now grate some mozzarella cheese and sprinkle some oregano and chili flakes on the breads.
  11. If you find your cheese is not melted up then put your sandwiches in microwave for 30 seconds.
  12. Your crispy Bombay Style Tawa Cheese Sandwiches are ready to enjoy.

I am very much fond of kulfi ,especially in summers. Matka kulfi is made up of pure milk with added flavors of green cardamom and some nuts. Malai kulfi is described as a popular traditional Indian Ice cream. 
kulfi comes in various flavors like rose,mango,zafrani,pistachio
 and the basic malai flavor. Kulfi is not whipped,its a dense frozen 
dairy based dessert.Due to its density kulfi takes time to melt as compared to western ice creams.
Kulfi is prepared by evaporating sweetened flavored milk via slow cooking.With almost continuous stirring to keep milk from sticking to the bottom of the vessel where it might burn,until its volume is reduced by half .This process makes the kulfi more creamy and it increases its fat too.Serving the kulfi in earthen pots enhances its flavor and gives a refreshing taste also.The use of earthen pot known as matka adds an aroma too in the kulfi.


I have added some crushed pistachios and almonds also to make the kulfi tastes more rich and yum.I still remember those golden days,when i use to go to my granny's house and in the evening i use to wait eagerly for that Tan Tan sound :-D ,yes the bell man i.e. kulfi wala. He used to sell his malai kufi which was known as Tilli Wali kulfi ,as this kulfi was served onto a stick.Those days can not come back but it has left withsome unforgettable sweet memories :-)



So lets start retrieving those beautiful memories by making this malai kulfi and share your past moments with your kids by serving them this traditional healthy Matka kulfi-

Ingredients -

  1. 1 liter full fat milk
  2.  1 cup fresh malai
  3. 2 tbsp milk powder(optional)
  4. 2 tbsp pistachio(cut it in small pieces)
  5. 1 tbsp almonds(cut in small pieces)
  6. 2 to 3 green cardamom powder.
  7. 1 cup sugar (you can reduce or increase the quantity according to your taste)


Method -

  1. Take a heavy bottomed pan or heavy kadhai and heat it up.
  2. Add milk and malai both at the same time.
  3. Add cardamom powder,milk powder and mix it well.
  4. Stir continuously to avoid lumps.
  5. Boil the milk.
  6. After a good 2 to 3 boils add almonds,pistachio and sugar.
  7. Stir to avoid the milk from getting burnt.
  8. Boil the milk till  the milk starts reducing and thickens.
  9. Now switch off the flame and let the mixture cool down.
  10. Take the matka and pour the mixture and cover it with a foil paper with a rubber band around it or you can also cover it with a cling film.
  11. Freeze the matkis for 7 to 8 hours.
  12. Lastly garnish the matka /malai kulfi with almonds and pistachios.
  13. Enjoy your memories and yummy Matka Malai kulfi together.

No Churn-No Flame-Hassle Free Mango Kulfi
Summer Season of mangoes is on,so give a try to this kulfi and get a relief from this scorching heat!
I always love to have mangoes in summers and this time i got good amount of gifted mangoes from my relatives,you must be thinking that "how lucky I am ;-D .So loads of mangoes and my foodie daughty asked for mango Popsicles,but i was not in a mood to face my gas stove,because of heat in the kitchen :-( but i can't say No to my daughter also,so i have given a try to these No Flame Mango Kulfi. A quick solution to beat the heat without coming near to heat in your kitchen.


I have added very few ingredients in these kulfis,so it will be very convenient for everyone to make them.These mango kulfis were very much similar to market bought mango popsicles but to give a real flavor of kulfi i have added some green cardamom also.
Home made ice creams are always the best because they are made up from pure milk and they are without any added preservatives .I have used Dussheri Mangoes as they are only sweet not sour in taste.
So before the mango season gets vanish,try out these yum creamy Mango Kulfi. Here goes the must try recipe-


Ingredients -
For 4 Kulfis

  1. 1 big sized Dussheri Mango(cut it into small pieces)
  2. 4 tbsp Condensed milk(you can decrease or increase the quantity according to your sweet tooth)
  3. Milk - half cup(small one)
  4. Green cardamom 3 pieces (crush them and discard its outer peel)


Method

  1. Take a blender and add mango pieces,milk,condensed milk and cardamom powder and give a good blend.
  2. Take your popsicle mould or you can also choose kulfi shaped aluminium moulds also.
  3. Pour the blended mix in your moulds and freeze it for 7 to 8 hours.
  4. After 8 hours take them out.
  5. Take a pan filled with water and heat up the water for 2 to 3 minutes and dip your moulds in that water.
  6. Start demoulding the kulfis.
  7. Enjoy your Cool Cool Mango kulfis :-)

wheat Mathri

Wheat Mathri
Mathri is one of the best and prominent snack which is preferred with tea.Specially we Indians love to have some munchies with our cup of chai ;-) and mathri is the most fancied choice.
Mathri is normally made up of all purpose flour which is available in stores but APF is not good for health,specially when its in fried form.This mathri is deep fried but it is made up of whole wheat and semolina(Suji)and its very much better than store bought because it is hygienic and fried in our regular refined oil which we use for our daily cooking.



  I have added some light spices also to make this mathri more tasty. Some people like sweet mathri also but i use to buy sweet mathri specially on Indian festival " karvachauth".But normally i don't like to eat sweet mathri I always prefer salted one.
This Mathri is crunchy and the mild flavor of spices adds a yum flavor to it.This is a perfect crunchy munchy option for your evening tea and you can also take this with your morning tea also as its gives a good filling to your empty stomach.


Sometimes we do get sudden craving to eat something specifically in evening but we do not want to opt for roti or sabzi ,so having this mathri is an appropriate decision to control our hunger pangs :-)So try out this recipe which is the best option for snacking-

Ingredients -\

  1. Wheat flour - 1 cup(200 grams)
  2. Semolina - 1/4 cup
  3. Carom seeds- 1 tsp
  4. Cumin seeds - 1/2 tsp
  5. Crushed black pepper powder - 1/3 tsp
  6. Salt as per taste
  7. Oil - 1/4 cup
  8. Oil for frying



 Method -

  1. Firstly sieve the wheat flour and semolina once to avoid impurities.
  2. Take a bowl add flour,semolina,salt,pepper powder,cumin seeds and carom seeds and oil.Mix it well.
  3. Now add water gradually to knead a dough.
  4. The dough should be little stiff for making crunchy mathri.
  5. Now cover the dough with a cloth and keep it for rest for 10 to 15 minutes.
  6. After 15 minutes knead the dough again,if you will find your dough little hard then add little water if needed.
  7. Heat up the oil in a wok.
  8. Now start making balls from the kneaded dough,flatten with your palms and place it on a rolling board(chakla)and roll out in about 2 inch thick round diameter.
  9. Take a fork and prick the rolled mathri from both the sides.
  10. Now deep fry the mathri,till they turn golden brown in color.
  11. Keep the mathri on an absorbent paper and get it cool down.
  12. Enjoy your Wheat Mathri with tea.

Baby Corn is a low calorie vegetable,as it has a same calorie content to other non-starchy vegetables such as broccoli,green beans etc.Baby corn is rich in fiber,which is good for your stomach.
You can cook various dishes with this vegetable but i have made it in a starter form,which is just perfect for your kid's parties or any get together.



As summer vacations are on and kids always want to eat something according to their taste and i think this is a big task specifically for mommies to decide what to make for them.so this is a great solution for our kids as they will eat vegetable also.
These fritters are specially for kids when they come home after playing or when they are studying in evening,so to refresh your munchkins and give them energy you must try this recipe.I am very much sure that your kids are going to love this.
These baby corn fritters are crunchy and yummy too.You can enjoy them with ketchup or your any favorite dip.
I have enjoyed these fritters in my Sunday special dinner with some butter toasted bread and some chips ;-)
So here goes the most wanted recipe for kids -



Ingredients -

  1. Baby corn (1 packet)
  2. Cornflour powder - 2 tbsp
  3. All purpose flour - 1 cup
  4. Salt as per taste
  5. Red chili flakes - 1 tsp
  6. Black pepper powder -1/2 tsp
  7. Oregano flakes as per your taste
  8. Oil for frying
Method-
  1. Take baby corn wash them and make them dry with a kitchen towel and cut them from between (make it half)
  2. Now take a bowl add cornflour,all purpose flour and add salt,pepper powder,red chili flakes and some oregano and mix it with a dry spoon.
  3. Take a glass of water and add it in the flour.
  4. Add the water gradually to avoid lumps.
  5. The batter should neither be thick nor watery.
  6. Now take a wok add oil and heat it up.
  7. Take 4 to5 baby corns and coat it with the batter and deep fry them.
  8. Flip when the baby corn starts changing its color.
  9. Take an absorbent paper and keep the fried baby corn on it.
  10. Your delicious crunchy Baby Corn Fritters are ready to enjoy with your favorite dip.
