Sunday Special

This Sunday After having my dinner ,I was badly craving for Meetha!As we have chosen an ice cream parlour and there we had Sunday special ice cream.After that when i came back to home,again i got a craving for sweet :-(
Now what?So i just checked my refrigerator and finally got a solution for it!
So I made this tempting ,healthy and fully satisfactory Sunday Special Ice cream.As you can easily make this at home by making it more nutritious as well as tasty.

  
This Sunday Special Ice cream you can have it any time ,i mean not only on Sundays ;-) This Ice Cream is very healthy for our kids because it contains fruits as well as nuts.
I'am very much sure that nobody is going to deny this ice cream!





 As normally we go to expensive Ice cream parlours and we spend lot of money for our sweet cravings,But the drawback is that these ice creams are too costly and it acts as "A drop in the ocean" ,means the quantity we get is sometimes not satisfying.
As at home we can make this ice cream and can have in a huge quantity!
So here goes the sweet recipe of Sunday Special -

Serving - for 1 glass
Ingredients -

  1. Vanilla Ice cream - 1 cup
  2. Fresh pineapple - 2 tsp (cut it into thin long size in small pieces)
  3. Walnuts - 1 whole (finely chopped)
  4. Choco Chips - 1 tsp
  5. Tutti Fruity - 1 tsp
  6. Strawberry Syrup  (for drizzling) 



Method -
  1. Take a glass drizzle some strawberry syrup on it.
  2. Now add few pineapple pieces in it.
  3. Then scoop out the vanilla ice cream and put it in the glass.
  4. After that add chopped walnuts in it.
  5. Then add choco chips and tutti fruity in the ice cream.
  6. Add one more scoop of ice cream and drizzle some more strawberry syrup on the top.
  7. lastly garnish the ice cream with the leftover pineapple pieces.
  8. Enjoy your Sunday Special at home :-)

Bhavnagri Mirch

Bhavnagri Mirch

Bhavnagri mirchi are stuffed with gram flour and dry masalas .It is also known as Bharva Mirchis .Its very famous in Gujarat, Maharashtra and Rajasthan.
This Mirchi is not at all bitter or teekhi in taste,these are mild and tangy!The flavor of  roasted gram flour is really different as it gives a crunch in every bite and the most important is that they are not deep fried.
You can have this Mirchi with Paranthas as well it goes specially with Arhar ki daal and Rice...mmmm ,my mouth has started watering :-)



When i have cooked these Mirchis ,my daughter has started eating any kind of pulses now,because with rice and daal combo it adds a taste in your food.
In India we Indians are really crazy for condiments whether its a 
Dhaniya pudina chutney,Aam ka achar or some onions with lemon means we always look for some tanginess and spice in our daily meals, so this mirchi is definitely going to add colors in your food! 



So here goes the Mouth watering recipe of Bhavnagri Mirch

Ingredients -

  1. Mirchi - 200 grams (wash these mirchi ,dry them with a cloth and make a slit in the center and if you want you can de-seed it ,but i haven't done that)I have made with seeds.
  2. Fennel powder - 2 tsp(you can take moti saunf i.e fennel seeds and grind them)
  3. Cumin Seeds - 1 tsp
  4. Coriander powder - 2 tsp
  5. Dry mango powder - 2 tsp
  6. Red chili powder - 1 tsp
  7. Salt as per taste
  8. Asafoetida - 1 1/2 pinch
  9. Gram flour (besan)-1/2 cup
  10. Lemon juice - 2 tsp
  11. Turmeric powder - 1 tsp
  12. Oil 4 to 5 tbsp

Method -
  1. Take a pan add 2 tbsp oil ,heat it up.
  2. Add cumin seeds and asafoetida and let it crackle.
  3. Once the cumin seeds is roasted add turmeric powder and gram flour in it.(keep it on medium flame now)
  4. Roast and stir till the gram flour starts changing its color.
  5. Stir continuously to avoid burning of gram flour.
  6. Now add fennel powder,salt,coriander powder,red chili powder,dry mango powder and turn off the flame.
  7. Now add lemon juice and mix it well.
  8. Let the masala cool down.
  9. Now take the mirchi and stuff them with masala.
  10. Take a pan add 2 tsp oil and place the chilies in the pan .
  11. Cover and allow them to cook for 3 to 4 minutes on a low flame.
  12. Check the chilies after 4 minutes and flip them.
  13. After turning them ,again cover the pan and cook for another 3 minutes.
  14. Your Bhavnagri Mirchi are ready to enjoy!

Matar Paneer! Is one of the first preferences for the vegetarians when you choose a dinner or lunch in restaurants.This matar paneer is a tried and tested recipe which you can make in your own kitchen and they would definitely say that"when you have ordered it?"
The aroma of home made masala and taste its just everyone is going to love it.I have not added any special paneer masala ,its made up of simple spices which are easily available in the kitchen.


Paneer is a rich source in calcium and proteins and it helps to give you instant energy and a power to fight with bone related problems. Paneer is also very beneficial for strong teeth.
On the whole paneer is a power pack choice for growing children as well as adults.
Now you don't need to spend your money in restaurants for your favourite Matar paneer as you are definitely going to enjoy this at home!
You can enjoy this matar paneer with hot steaming rice or roti.




So here goes to yum yum healthy recipe for this Matar paneer!

Ingredients-

  1. Matar (green peas) i have used frozen - 100 grams(firstly boil it for 10 to 15 minutes and then strain the water)
  2. Paneer - 200 grams
  3. Onions - 2 medium sized(grinded)
  4. Tomatoes - 3 to 4 medium sized(grinded)
  5. Garlic - 1/2 pod(finely chopped)
  6. Ginger - 1 tsp(Grated)
  7. Refined vegetable oil - 2tbsp
  8. Tej patta- 1 leaf
  9. Cumin seeds - 1 tsp
  10. Red dry chili-2 to 3
  11. Salt as per taste
  12. Coriander powder-1 tsp
  13. Mango powder- 1 tsp
  14. Turmeric powder - 1/2 tsp
  15. Red chili powder - 1 tsp (as per your taste)
  16. Sugar - 1/2 tsp
  17. Milk - 1/2 cup(small one)
  18. Fresh Malai or cream - 1 tbsp
  19. Salted Butter - 2 tsp

Method -
  1. Take a wok add Oil in it let it heat up.
  2. Add cumin seeds,tej patta,dry red chilies and ginger garlic in it.
  3. Now stir it for few minutes.
  4. Now add onion paste in the oil and stir it till it changes its color.
  5. After that add tomato paste and add salt,sugar,coriander powder,mango powder,turmeric powder,salt and Red chili powder in it.
  6. Mix it well till the masala starts turning golden in color and starts leaving the oil.
  7. After that add peas in it.Roast it well with masala.
  8. Add half cup of water in it.
  9. Stir it till the gravy becomes little thick.
  10. Now add some milk in the gravy.
  11. Then add fresh malai in it.
  12. Wait for a nice boil.
  13. Now in the last when you will find the gravy has cooked up properly ,then add the paneer cubes in it.
  14. Now lastly add salted butter in it.
  15. Your Matar Paneer is ready to enjoy with hot steaming Rice or Chapaties.

Arbi Teekha Masala

Arbi is the most common vegetable available during summers.As there are so many variations in making Arbi.
Some like to have it in simple boiled form with the Tadka of heeng and carom seeds or some people just deep fry them with dry masalas!
As i'am a little chatpati type of person so i have made this arbi tangy,spicy as well as tasty.
Cutting arbi is a little fussy work as sometimes it causes irritation and itching on hands,so better to apply some coconut oil in your hands while peeling and cutting the arbi.
As my daughter is not an arbi lover,but this kind of arbi she just loved it.As i served her this arbi with hot crispy buttery paranthas and she loved it!This is the most happiest moment when your kids starts eating vegetables without any objection :-)


As arbi is a very good for health it clears your stomach,it removes toxins in your body and detoxifies it.The most beneficial point for our beauty conscious girls are that it slow down the ageing process! 
So no more wait for the chatpati Recipe!


Please apply some oil while you start peeling the Arbis as i have mentioned above also!
Ingredients -

  1. Arbi - 1/2 kg
  2. Onions Chopped - 2 medium sized
  3. Tomatoes grind them first - 3 medium sized
  4. Garlic Cloves - 4 to 5(Finely chopped)
  5. Green chilies chopped - 2 to 3 (optional)
  6. Salt as per taste
  7. Sugar- 1/2 tsp
  8. Red chili powder - 1 tsp
  9. Cumin seeds - 1 tsp
  10. Turmeric powder - 1/2 tsp 
  11. Coriander powder - 1 tsp
  12. Mango powder - 2 tsp
  13. Oil for frying


Method-

  1. Firstly take the arbi ,peel it and cut it into long slices.
  2. Then wash them in a flowing water to remove its starch.
  3. Then strain it and keep it aside.
  4. Now take a wok add oil in it and heat it up.
  5. Take a batch of arbi (6 to7 arbi pieces each time) and deep fry them.
  6. Fry them till it turns translucent in color and take them out on an absorbent paper.
  7. Same way take another batch and deep fry and repeat the process.
  8. Now take a pan add 2 tsp oil and add cumin seeds in it.
  9. Then add garlic ,green chilies and onions in the oil.Stir it till it changes its color.
  10. Now take the the puree of fresh tomatoes and stir it for 5 minutes.
  11. Then add some sugar,turmeric powder,salt,chili powder and mix it well.
  12. When the masala starts leaving oil add fried arbi in it.
  13. Mix it gently.
  14. Now add coriander and mango powder.
  15. Mix it very well for around 5 to10 minutes.
  16. Enjoy your arbi with crispy paranthas.

Lapsi

Lapsi

Lapsi is a coarsely ground wheat like semolina from India!
Lapsi dish is a very special sweet dish of Gujarat and Rajasthan. It is prepared with broken wheat also known as Dalia.(porridge) 
As I'am not a Rajasthani or Gujrati but this dish is very nearest to my heart,because my family loved this dish! 
As normally nobody likes to have Porridge in my life and i used to feed them forcefully but this Lapsi was just got finished within in 20 minutes :-)

 

Lapsi can be made in kadhai but i have made this in pressure cooker as it cooks faster in pressure cooker.The color of lapsi is normally brown or cream but i have added jaggery in it.As jaggery gives a beautiful color as well as yummy taste.You can add sugar also as per your choice!
For me this dish is a total healthy option that can be consumed in your breakfast or when you are badly craving for a Dessert.The sweetness of jaggery and the fragrance of Desi Ghee is just a bliss for me!
Step by step pics are available in this recipe,so it will be easier my foodie friends to make this Lovely Lapsi Dish!


So here goes the mmm...yummmm Recipe!-

Ingredients -
Porridge - 1 cup
Jaggery 1/2 cup (you can sugar also)
Desi ghee - 3 tbsp
Chopped Almonds - 1 tsp
Raisins - 1 tsp
(you can add cashews also)
Green Cardamom - 1 to 2 pieces
Water - 2.5 cups




Method -
  1. Preheat the pressure cooker over flame.
  2. Add 1 tbsp ghee into it.
  3. When ghee starts melting add porridge and stir continuously.
  4. Cook until it gets slightly brown in color.
  5. After roasting porridge add 2.5 cups of water and close the pressure cooker with lid.
  6. After one simmer,turn of the flame.
  7. When all steam escapes ,open the lid.
  8. Peel the cardamom and powder it.
  9. Add jaggery ( i have crushed the jaggery pieces)in porridge and mix it well.
  10. Now add chopped almonds,raisins,cardamom powder and rest of the ghee  into it and mix all the ingredients really well.
  11. Cook lapsi till the porridge and jaggery dissolves completely .
  12. Lapsi is now ready ,turn off the flame .
  13. Take out the lapsi in a bowl and garnish it with some nuts.
  14. Enjoy your tasty Lapsi!
