Oreo Cheese Cake
Cheese cake is a no bake cake and a very easy option for desserts.But when i use to see the pictures of cheese cakes,i found it difficult to make it,because cream cheese is normally not easily available or its very expensive to buy.
So i have made cream cheese at home only with only two ingredients which are always within easy to reach.
This is a healthy cheese cake because the cream cheese i have used is made from my fresh dairy ingredients.
The chocolaty flavor and crunchiness of oreo biscuits is delectable and you can't stop yourself from eating it.



You can make this cheese cake on special occasions also like birthdays or get together dinner parties and i am very much sure that you will definitely receive appreciation from your friends and relatives :-)
So the recipe of Oreo cheese cake goes like this-



Ingredients -

  1. Milk - 1 liter(full fat milk)
  2. Vinegar - 2 tbsp
  3. Curd - 2 to 3 tbsp
  4. Oreo biscuits - 20 to 25 pieces
  5. Melted butter - 2 tbsp
  6. Melted chocolate - 100 grams
  7. Castor sugar - 1 cup(you can add more or decrease according to your taste buds)
  8. Salt- a pinch
  9. Chocolate chips and chocolate sauce for garnishing.

Method -
  1. Firstly we have to make cream cheese for this you need to take a heavy bottomed pan and add milk to it.
  2. Give it a boil and add vinegar to it,and curdle the milk.
  3. You can increase the quantity of vinegar if it does not get curdled.
  4. Now separate the cheese from the milk and put it on a muslin cloth and keep it aside for 15 minutes.
  5. Now squeeze the excess of water from the cheese and take the cheese out and put it in a mixer jar with a pinch of salt and Castor sugar.
  6. Now add 2 tbsp curd in it and give it a good whisk.
  7. Check the consistency of the cream cheese,it should not be grainy,if its grainy add more curd and give a mix again.
  8. The cream cheese should be very smooth and not grainy.
  9. Your cream cheese is ready and keep it fridge.
  10. Now start getting ready to make the biscuit base.
  11. Take a ring mould or any round vessel and put a butter paper on it.
  12. Take 10 to 12 oreo biscuits and crush them in a mixer jar .
  13. Add melted butter in the powdered biscuits and mix it well.
  14. Now spread this mix on the butter paper and with the help of spatula spread the mix evenly on the butter paper and keep it in the freezer for at least 1 hour or till it gets set and hard.
  15. After the base gets ready take it out.
  16. Take 8 to 10 oreo biscuits and crush them roughly with your hands and mix it in the cream cheese.
  17. Spread your oreo cream cheese on the biscuit base.
  18. Spread it evenly with the help of a flat knife or spatula.
  19. Give a light tap and again freeze it for 1 hour .
  20. Now get ready with your melted chocolate .
  21. Take out your cake and check it should be little stiff in the texture.
  22. Now Spread your melted chocolate and garnish the cake with choco chips.
  23. Again freeze it for more 15 minutes.
  24. Remove the cake from the butter paper very patiently and cut it in big slices as the chocolate will get little hard,so its little tricky to give it a proper triangle shape.
  25. Your Oreo Cheese cake is ready to eat.

Summer season is going on and in summers we don't want to have heavy meals and even sometimes we skip our regular meals also,but our body needs some calories and nutrition,so we normally take cold drinks or juices to get instant energy.We do get instant energy from these drinks,but they are not at all good for your health specially stomach,because our stomach gets weak in summers due to excess of water loss through sweating and less intake of nutritious food.
So i have got a solution by making strawberry lassi. This lassi contains 100% pure fruit and curd which will give you an instant energy and it is going to give relief  to your stomach also.


This lassi does not contain any preservatives or colors.You can have this lassi in your breakfast or lunch,as it is definitely going to give you a satisfaction even if you have skipped your meal.
This strawberry lassi is really yummy in taste and some pulp of the strawberry in the lassi gives a different taste.
So here goes the healthy recipe of Strawberry Lassi-





Ingredients -

  1. Fresh curd - 1/2 liter(around 2 glasses)
  2. Strawberries - 6 to 8 pieces
  3. Sugar - 3 tbsp(you can add more or less according to your taste)
  4. Ice cubes (optional)

      
Method -
  1. Take a mixer jar add curd and sugar in it and give a whisk for  about 1 minute.
  2. Now add strawberries and again give a shake .
  3. Check the strawberries has crushed up properly if not then again whisk.
  4. Add water or ice cubes in the jar.(i want my lassi to be little thick so i haven't added both water and ice cubes,as i have added only ice cubes around 4 to 5)
  5. Go for a blend again .
  6. Pour chilled in the glasses or bottles and enjoy every sip of it.

Another healthy food post for my health conscious friends.Oats upma is a very nutritious version taken in your breakfast,as we all know breakfast is the most important meal of our day.
This upma consists of vegetables which makes a complete pack of power and good health.Oats upma is not at all tasteless,as lot of people is having a myth in their mind that oats and upma sounds too boring but this one is really yummy,tangy and flavorful.



You can add variety of vegetables as per your choice in this upma.
Even i always prefer to eat paranthas or breads in my breakfast because i use to hate unflavored food ,but when i have tried this oats upma i have stopped taking all this heavy food in my breakfast and now me and my family love to have this.
So what are you waiting for?Go ahead by trying this tasty and healthy oats upma.



Ingredients -

  1. Oats - 2 cups
  2. Onion medium sized - 1 chopped.
  3. Tomato - 1 chopped
  4. Peas - 1/2 a cup
  5. French Beans - 1/2 a cup chopped
  6. Capsicum - 1 small sized chopped
  7. Carrot - 1 finely chopped
  8. Lemon - 1/2 piece
  9. Red dry chilies - 2 to 3
  10. Asafoetida- 1 pinch
  11. Cumin seeds - 1 tsp
  12. Mustard seeds -1/2 tsp
  13. Curry leaves - 7 to 8
  14. Salt and black pepper as per your taste.
  15. Oregano flakes - 1/2 tsp

Method -
  1. Take a wok dry roast the oats for 5 to 7 minutes and keep aside.
  2. Take another wok add 1 tsp oil and add curry leaves,cumin seeds,dry chilies, asafoetida and mustard seeds and let it crackle.
  3. Now add all the veggies and stir them well.
  4. Now add around 1/2 a cup of water and cover it with a lid for 3 to 4 minutes.
  5. Now add your roasted oats and add 1 cup of water.
  6. Add salt and black pepper and cover it with a lid for more 5 minutes to make oats little softer.( Add more water if needed)
  7. Now when you will find the oats have become soft and mixed up properly,then switch off the flame and add oregano flakes and sprinkle lemon juice.
  8. Enjoy your yum yum oats upma.

Holi festival is over now and you must have enjoyed a lot by eating lots of sweets,delicious heavy fattening food but now its time to relax your tummy by having some healthy food!
Oats Chila is having very less calories and its really a good option for the people who are weight conscious and they want something satisfactory but non-fatty breakfast.
You can have this chila in your lunch or dinner also and its not even healthy but yummy too.



This oats chila is really good for your digestion system as its easily digestible and can easily makes your tummy full.
Oats are a vigour option for everyone,but normally people don't like to eat oats because they don't have any kind of specific flavor or taste,means we have to give a taste to the oats to make it flavorful and tasty.
So this oats chila is tasty and even kids are also going to enjoy this in their tiffin boxes.
So here goes a must try recipe for nutritious food lovers-



Ingredients -

  1. 1 Cup of oats 
  2. 1/2 cup of finely chopped onions
  3. 1/2 cup of non fat buttermilk(you can use normal also)
  4. 1 tsp Vegetable oil 
  5. Salt as per your taste
  6. Black pepper powder - 2 pinch

Method -
  1. Firstly take a wok and dry roast the oats for 5 to 7 minutes.
  2. Take a mixer jar add oats,buttermilk,salt and black pepper powder and go for a smooth blend.
  3. Take a non stick pan add 1/2 tsp oil and spread the batter ,cover the pan with a lid for 5 minutes.
  4. Now sprinkle rest of the 1/2 tsp oil on the chila and flip it to cook it from the other side.
  5. when you will find the chila have turned crispy and changed the color,it means its done.
  6. Start the plating and enjoy your Oats Chila.

Mirchi Ka Salan

Mirchi ka salan is a popular chili and peanut curry of Hyderabad .This Curry is normally accompanied with biryani. Mirchi ka salan is a spicy and tangy dish which has a unique taste.
I haven't used spicy chilies in it as it will balance the flavor of the curry.
Normally the salan is liquidy but i have made it little thick.The deep fried mirchis in the tangy and creamy gravy is really delicious and you are definitely going to love it.


  
I have served this salan with jeera rice and cool onion and coriander raita. The raita is really balancing the spiciness of the curry.You can have this mirchi ka salan with biryani or fried rice also.
I have made this dish for the first time and everyone in my family loved it ,hope you are also going to love this yummy Mirchi ka salan. So here goes the must try recipe-




Ingredients -
  1. Green Chilies Thick one - 12 to 15
  2. Sesame seeds - 2 tbsp
  3. Coriander seeds - 2 tbsp
  4.  Cumin seeds - 1 tbsp
  5. Peanuts roasted - 1/2 a cup
  6. Dry red chilies - 4 to 5
  7. Ginger roughly chopped - 1 inch piece
  8. Garlic - 5 to 6 cloves
  9. Mustard seeds - 1 tsp
  10. Curry leaves - 5 to 6
  11. Onion grated - 2 medium sized
  12. Turmeric powder - 1 tsp
  13. Tamarind pulp - 2 tbsp
  14. Sugar - 1/2 tsp
  15. Salt as per taste
  16. Oil for deep frying 

Method -
  1. Wash and wipe the mirchis and make a slit in between,without cutting the chilies in two parts .
  2. Now take a wok add oil heat it up and deep fry the mirchis for 5 to 10 minutes,when the mirchis starts changing its color,take them out on an absorbent paper or kitchen towel and keep aside.
  3. To make a masala paste dry roast cumin seeds,coriander seeds and sesame seeds for 4 to 5 minutes.
  4. Now let the spices cool down and add dry red chilies,ginger,garlic along with peanuts and grind them to  make a paste.
  5. Now take another wok add 2 tbsp oil and heat it up.
  6. Add mustard seeds ,curry leaves and let it make a crackling sound.
  7. Saute it and add grated onions in it.Stir it till onions starts turning golden in color.
  8. Add turmeric powder and mix it well.
  9. Now add the masala paste and roast it for few minutes.
  10. Now add sugar and again stir.
  11. Add salt as per your taste.
  12. Now pour around 1 cup of water and cover it with a lid.
  13. This process will take at least 10 minutes.
  14. Now uncover the lid and add tamarind pulp dissolved in 2 tbsp of water.
  15. Go again for a boil.
  16. Now when you will find the curry is being cooked up then add your main ingredient fried mirchis .
  17. Cook for 2 to 5 minutes more by stirring the curry.
  18. Your tempting Mirchi ka Salan is ready to enjoy with rice.

What you normally do with your left over Malai?Make ghee?
Normally people do make white butter from leftover malai but i have always found a bad smell in the home made butter.
But this time i have made white butter which was perfect like market bought butter.
Few tricks can help you in making your white butter smell free and purely fresh!

This butter is really yummy to enjoy it with your salted paranthas or even bread also.
This butter will stay for around 4 to 5 days in refrigerator and if the butter is left than you can make ghee from it without any wastage.
So here goes the must needed recipe of home made white butter.



 Ingredients -
  1. Left over Malai (use 5 to 6 days leftover malai)
  2. Ice Cubes - 2 to 3
  3. Ice cold Water - 1 bowl
  4. Salt -2 pinch (if you like salted taste)(optional)
Hand blender



Method -
  1. Firstly take out your malai bowl out from the fridge.
  2. Keep it at a room temperature for around 1 hour.
  3. Then take a deep big wok add your malai in that wok.
  4. With a hand blender start blending the malai.
  5. Initially you will find the malai like a thick cream.
  6. Add some salt if you want otherwise skip this step.
  7. Again blend it for few minutes.
  8. Now add little ice cold water (around 2 tbsp)
  9. Now blend it again,when you will find liquid milky water leaving butter,it means your butter is coming out.
  10. Now you can add some ice cubes in the butter wok and again blend it.
  11. When your chaas (the milky water)leaves the butter,this means your butter is ready.
  12. Now the main step is make a ball from the butter with your hands and you can use that leftover chaas for your gravies or you can discard it.
  13. Take the ball of the butter and wash it with some normal water.
  14. Then take a bowl of ice cold water and dip your butter ball in it.
  15. Keep the bowl of butter and water in the deep freezer for around 45 minutes.
  16. After 45 minutes when you will see the butter has turned stiff/hard then take out that bowl from deep freezer,discard the water and keep your butter in a bowl and put in the refrigerator.
  17. Your smell free Home Made white Butter is ready to eat.
