Vegetable Vermicelli
Hey Foodies!As you all are facing hot scorching summer season and we are not in a mood to eat heavy meals specially breakfast,so i have tried this vermicelli with the goodness of vegetables which makes the dish full of nutrition and energy too.
Sundays are always lazy and we want something easy and tasty to prepare in breakfast.Vermicelli made up of suji(rawa)is really good for health as its very light and easy to digest.
People do enjoy vermicelli in desserts also by making kheer or meethi sevai also.But my family likes to have this in salted version only.


I have tried various methods to cook vermicelli but most of the time it turns to be very sticky.But now i have tried another method which will make your vermicelli not sticky ones.
Vermicelli can be taken in breakfast or lunch too and you can also give this to your children in their lunch boxes,I am sure they are going to enjoy this.Children normally enjoy this vermicelli with ketchup but i have served this with green coriander chutney and chilled cold coffee...mmmmm :-D


 As I have added veggies of my choice you can take any veggie of your choice.Vermicelli looks like fried rice but it tastes very different not like rice.Normally vermicelli contains very less spices and it has very mild flavour.But you can add spices if you desire according to your taste buds.So here goes the kids special recipe of Vegetable Vermicelli-

Ingredients -


  1. Vermicelli - 2 cups
  2. Boiled peas - 1/2 a cup
  3. Capsicum -1 medium sized (thinly sliced)
  4. Onions - 2 medium sized (thinly sliced)
  5. Carrots - 2 medium sized (finely chopped)
  6. Rai (mustard seeds)-2 tsp
  7. Curry leaves - 3 to 4 (wash it before using it)
  8. Salt as per taste
  9. Red chilli powder -1 tsp
  10. Dry mango powder - 1 tsp (optional)
  11. Coriander powder - 1/2 tsp
  12. Turmeric powder - 1/4 tsp
  13. Lime juice - 1 tsp


Method -
  1. Take a wok heat it up and add vermicelli and dry roast it for few minutes (4 to 5 minutes)
  2. Now take a pan add water,add the roasted vermicelli and let it boil for 5 to 6 minutes or till it gets soft (timing depends on quality of vermicelli too)
  3. Now when you will find the vermicelli has turned little soft,then strain it water and wash it with running cold water to remove the starch.
  4. Now after washing strain the excess of water and add 1/2 tsp of oil and mix it in the vermicelli to avoid stickiness.
  5. Now take a wok heat it up and 2 tsp oil.Add curry leaves and rai and let it splutter.
  6. Add onions and fry it till it changes its colour,do not make the onions brown in colour.
  7. Now add peas,capsicum,carrots and fry them.
  8. Add turmeric powder,salt,red chilli powder ,coriander powder and dry mango powder and mix it well.
  9. Now take the vermicelli mix it with your fingers first and then put it in the wok,take in batches(do not put all the vermicelli at once)
  10. Mix the vermicelli gently and lastly sprinkle some coriander leaves and lime juice.
  11. Enjoy your hot hot Vegetable Veermicelli with Cool Cool Coffee.
