Chatkara Chicken

Chatkara Chicken
I think you haven't heard this type of chicken!Yeah this is because ; i have named it.
Yes its Chatkara chicken because it will create a chatkara of tanginess and masala in your mouth and it will be chat i.e finished by your family members and friends.
This chicken is tender from inside and crunchy outside.
As i have been to many restaurants and i have tried dry non veg varieties but the drawback i normally get is that those chicken pieces gives a good taste till they are eaten from the upper coating but when it comes to the inside part of flesh they are tasteless and just salty,means the masala doesn't gets infused in the whole 
chicken. 
But this recipe I am very much sure you are going to enjoy every bite of it because i have maintained a balance of flavors inside and outside of the chicken.


As the first pic surely have turned your mouth watery?So a must try recipe for hardcore non-vegetarians who just love chicken as a starter!
Its a very simple recipe which needs very few ingredients and still you will be getting beautiful flavors!So no more wait for this tempting recipe-




Ingredients -

  1. 2 Leg pieces of chicken
  2. 3 to 4 cloves of garlic(crushed)
  3. 1 tsp ginger (crushed)
  4. 1 Whole lemon juice
  5. 2 tsp salted of butter
  6. 1/2 tsp Pepper powder 
  7. Salt as per taste
  8. 1 egg
  9. 2 tbsp Cornflour powder for binding.

Method -
  1. Firstly wash the chicken with Luke warm water ,clean it and drain the water.
  2. Now take a bowl add chicken pieces in it.
  3. Take crushed garlic and ginger rub it on the chicken.
  4. Now take pepper powder,salt and mix it with the chicken.
  5. Pour a lemon juice on it.
  6. After putting all the ingredients just make small cuts on the chicken pieces by using a knife.
  7. Now take a fork and dig it on the chicken pieces so that the lemon juice and masala of salt and pepper should infuse properly.
  8. Now keep this bowl in fridge for around 2 hours.
  9. After two hours take the chicken out and again prick it with fork.
  10. Then take one bowl add egg in it ,whisk the egg for 1 minute.
  11. Now spread some cornflour in a plate.
  12. Take a wok add butter in it.(do not let the butter to be burned)
  13. Add some more garlic in the butter.
  14. Now take the chicken pieces and dip it in the egg properly and then coat it in the cornflour powder.
  15. Now take the coated piece and add it in the wok.
  16. Mix it very gently so that the coating should not break or spread in the wok.
  17. Now cover it with a lid on a low flame for around 10 minutes.
  18. After 10 minutes flip the chicken and prick it with the fork again.
  19. Then add some more lemon juice or salt if required.
  20. After 10 minutes if the chicken starts turning tender then its done,if not then keep it more for 5 minutes with a covered lid.
  21. Your Chatkara chicken is ready to enjoy!

Sinful Chocolate cake

Sinful Chocolate Cake

Chocolate!yeah I think we all love Chocolates.

Baking a cake does need a reason ?Craving for sweets ?
A cake is a super good option that can satisfy your *sweet tooth* and hunger.
This is an Egg-less Cake with a gooey texture and the melted chocolate on the top its just Sinful!

Yeah !I know you must have got a feeling of having this Luscious cake.The chocolate chips on the top is adding a crunch in every bite,and
the softness of the cake  just leaves a chocolaty sticky flavor in your mouth.



So no more wait for my Foodies . Here goes the yum yum recipe for your kids and even adults who are fond of chocolates and chocolate cakes like me. Ha-ha!!

Ingredients -

  1.  1 cup all purpose flour
  2. 1/2 cup castor sugar
  3. 60 grams salted butter
  4. 3 tsp cocoa powder
  5. 1 tsp baking powder
  6. 1/2 tsp baking soda
  7. 1 tsp vanilla essence
  8. 2 tsp milk.
For icing-
  1. 70 grams chocolate bar
  2. 2 tsp milk
  3. Choco chips for garnishing
  4. White grated chocolate for garnishing
Steps-
  1. First take a bowl add room temperature butter in it and whisk it for 3 to 4 minutes.
  2. Now take the sugar and add this into the butter.
  3. Beat it with a beater or a hand whisker.
  4. Now take another bowl add all purpose flour,baking soda and baking powder and sieve it at least 3 times and then mix it with a spatula.
  5. Now add cocoa powder in the dry sieved mix.
  6. Take the bowl of butter and sugar mix and add the dry mixed powder it.
  7. With the help of a beater beat it by adding milk in the batter for just 10 to 12 minutes(just add the milk gradually, so that it should not turn liquidy or watery)
  8. Now Preheat the oven at 160 degree for 10 minutes.
  9. Take your aluminium tin and grease little oil or butter on it and place a butter paper by covering the base and sides of the tin and then again grease the butter paper.
  10. Now pour your chocolate batter in the tin and bake and place it on the center shelf at 160 degree for 35 minutes.
  11. After 35 minutes ,check your cake from the center by pricking up a tooth pick or a skewer ,if it comes out clean ,then your cake is ready,if not then again bake it for 5 to 7 minutes.(Temperature varies from oven to oven)  
  12. In the mean time take your chocolate bar and melt it by double boiling method by  or you can just microwave it for few seconds or 1 to minutes .
  13. In the melted chocolate just add 2 tsp of milk it will give a good consistency .
  14. Now take the tin out from the oven and do not take the cake out from the tin for at least 10 minutes.
  15. Then gently run a knife around the edge and turn the cake out remove the butter paper and keep it on a wire rack.
  16. For the icing , spread the melted chocolate on the top of the cooled cake and garnish it with choco chips and grated white chocolate.
Important tip - When you are going to add milk in the cake powder just keep an eye that the batter should not be thin or very thick.So you can take more milk or less milk according to your quantity.

Cranberry Pickle


Cranberry Pickle
Every one has got a special name for their Grandmother -Grandma,Nonna,Nani the list goes on and on!You are lucky enough to have her in your life,she is probably beautiful,pretty awesome. :) Full of wisdom,home made remedies,recipes and life experiences.
So here I present a condiment that is very special  for me <3  instant pickle recipe dedicated to her!


I think we Indians believe that our meal is incomplete without pickles am I right?
Pickles are something special ,they add taste to a simple food also,a simple Ajwain Parantha , Daal Chawal or even a Simple Roti.



Ingredients-

  1. Cranberry known as Karonda - 1 cup (around 100 grams)
  2. Raw Mango - 1 whole piece
  3. Green chilies -2 to 3
  4. Sugar -1/2 tsp
  5. Fennel seeds - 1 tsp
  6. Fenugreek Seeds - 1/4 tsp
  7. Red chili powder - as per taste
  8. Coriander powder -1 tsp
  9. Mango powder - 1/2 tsp
  10. Turmeric powder -1/4 tsp
  11. Salt as per taste
  12. Mustard oil - 2 tsp(you can add more according to your choice)

Steps -
  1. Firstly take the cranberries wash them and make them dry with a kitchen towel or any cloth.
  2. Now cut the cranberries from between and make it into pieces.
  3. Now take raw mango,peel its skin and cut it into small cube shape.
  4. Take green chilies ,wash them make dry and remove their stems ,but do not cut or slit them.
  5. Now take a wok add oil let it heat for 5 to 7 minutes,till the smell of mustard oil goes away.
  6. Now add fennel seeds and fenugreek  seeds in it.
  7. Stir it for 2 minutes.
  8. Now add cranberries raw mango and green chilies in it.
  9. Add sugar,salt,chili powder,mango powder,coriander powder all dry masalas in it.
  10. Mix it well.
  11. Now cover this with a lid for 10 minutes.
  12. After 10  minutes check the cranberries has turned little soft(they should not be over cooked)
  13. Your Cranberry pickle is ready to enjoy with Parathas or fried rice.

Ilaichi cookies


Ilaichi Cookies
I just love the aroma of Ilaichi in Biscuits ,Tea,Halva or Phirni.

 Ilaichis are recognized by their small seed pods, triangular in cross-section and spindle-shaped, with a thin, papery outer shell and small black seeds.They come in green color as well as black which is known as Green cardamom (hari ilachi )Or Black cardamom(badi ilaichi)

As rainy season is on ,so tea and coffee is on everyone's mind .So one day i was badly missing my ilaichi tea but with some ilaichi biscuits but it was not available in my house!Sounds sad na?
So just got an idea why not to bake the cookies at home ,so that i can enjoy fresh ilaichi flavor with my special tea!



When i have started baking my cookies , my daughter helped me in making Ilaichi ,ginger and tulsi tea.So that when the cookies will be ready,soon we are going to have tea and cookies together.


So finally after some time , my fresh baked cookies were ready!A happy moment to enjoy with the rains and of course with the sweetness and aroma of Ilaichi cookies.So here goes the yummy recipe with step by step process pics-

Ingredients-
  1. 1 cup Maida(all purpose flour).
  2. 1/2 cup Castor sugar.
  3. Salted butter - 75 grams(keep it at room temperature)
  4. 1/2 tsp Baking Powder.
  5. Ilaichi Powder(You can take 3 to 4 Ilaichi and crush them).
  6. 2 tsp milk for kneading the dough.





Method -
  1. First take a bowl and add the butter and whisk it for few minutes.
  2. Now add castor sugar in it and whisk it with butter till it gets mixed up properly.
  3. Now take the maida and baking powder and sieve it twice.
  4.  Now add ilaichi powder and mix it with sieved maida and add it in butter and sugar and mix it with beater or hand mixer.
  5. Now make a dough of it by adding milk gradually in the dough (remember the dough should be soft but not liquidy type and neither too hard).
  6. Now take a cling film and wrap the dough and keep it for rest for around 15 minutes.
  7. In the mean time pre- heat the oven at 160 degree for 10 minutes.
  8. After 15 minutes take the dough and make its balls .Place a butter paper on the baking tray and put the balls on it  by maintaining a proper distance as shown in the pic above.
  9. Bake it on a baking mode on the center shelf for around 20 to 25 minutes(time varies from oven to oven)
  10. After 20 minutes take out the tray and let the cookies cool down for 5 minutes ,after 5 minutes place the cookies on a wire rack and let it cool down completely for at least 20 minutes.
  11. Your Ilaichi cookies are ready to be served with masala chai or hot coffee!Enjoy!

Creamy Paneer Tikka

Creamy Paneer Tikka when i am writing this name i am feeling the hunger again!
Iam a paneer lover and i always try my hands on adding paneer in many dishes.I have made many gravies as well as snacks ,wraps from paneer,But this one was truly loved by my family members.
This recipe i have just tried in my new otg ,i mean my first experience in roasting method and this was wow!It was tender and juicy inside and crunchy outside.




Paneer tikka is an Indian dish made from chunks of Paneer marinated in spices and grilled in a tandoor. It is a vegetarian  alternative to chicken tikka and other meat dishes.It is a popular dish that is widely available in India and countries with an Indian diaspora.


Chunks of paneer, are marinated in spices and are then arranged on a stick with capsicums,onions and tomatoes .These sticks are grilled in a tandoor and  is thereafter served hot, seasoned with lemon juice and some chaat masala.This dish traditionally goes well with mint chutney. 


If you are not having tandoor at home no need to worry ,you can also give a try in otg as it gives the same smoky flavor as well as the texture.The marination process is the main key for making your paneer tikka tastes like restaurant style !


So here goes the recipe-
Ingredients-
  1.  Paneer 250 grams (cut it into thick cubes)
  2. Capsicum -2 whole cut in square shape
  3. onions - 2 whole cut in square shape
  4. Thick curd -1 cup
  5. Crushed garlic -5 to 6 cloves.
  6. Crushed ginger -1 small piece (1 tsp)
  7. Lemon juice -1 whole lemon
  8. Salt as per taste
  9. Turmeric powder -1/2 tsp
  10. Red chili powder as per taste
  11. Coriander powder - 1 tsp
  12. Tandoori food color according to your choice of color you desire.I have used around 1/2 tsp.


Steps-
  1. Take a bowl add curd salt,chili powder,turmeric powder,tandoori color,ginger garlic paste ,lime juice and whisk it properly.
  2. Now add capsicum,onions and paneer cubes in the curd ,mix them gently to avoid breaking of paneer cubes and marinade for at least 4 hours and refrigerate it.
  3. After 4 hours ,pre heat the otg at 200 degrees at broil function mode for 10 minutes.
  4. Now skew the veggies one by one in skewers.Like first go for capsicum, then paneer,then onion and again paneer like a sequence.
  5. After 10 minutes brush the paneer and veggies with little oil,broil or roast it for 20 to 25 minutes on the upper shelf at 220 degrees.(varies from oven to oven so please check your paneer in between)
  6. Now after 25 minutes check the paneer and serve it with coriander mint chutney.
For mint chutney i have added a spoon of curd in it.

Fondant Potatoes

Fondant potatoes is a version popular in England and France ,butter is melted in a pan .
The cut  potatoes are placed in the butter with one flat side down until the side is thoroughly browned and crisp.
Fondant potatoes simultaneously taste of pure potato and of more than potato ,they get juicy inside. 
As my family is very fond of potatoes ,so i tried my hands on this beautiful recipe!
Its really a good combo with A hot cuppa of Tea or Coffee ,as it is perfect rainy snack.

I have made this in an amazing rainy weather ,though i enjoyed this in my balcony by viewing the awesome scene of drizzling rain and greeny trees ,this is called as Double mazza!
So here goes the scrumptious recipe-

Preparation Time - 20 minutes
Cook Time - 15 to 20 minutes


Ingredients -
  1. 50 grams salted butter.
  2. 2 Potatoes ,peeled cut into barrel shape using a cookie cutter or you can shape it with a flat knife also.
  3. 2 to 3 garlic cloves,slit it from between.
  4. 2 sprigs of fresh thyme.
  5. salt and oregano as per taste.

Method -
  1. Heat the butter over the medium heat in a sauce pan.
  2. When the butter starts foaming,add the potatoes and fry until deep golden brown on one side for 5 to 6 minutes.
  3. Turn over the potatoes and cook for further 5 to 6 minutes or until they turn golden-brown on both sides.
  4. Add garlic,cloves and fresh thyme in the butter.
  5. Sprinkle a dash of salt and oregano flakes.
  6. Flip again gently to avoid breaking of the potatoes.
  7. Place them on an absorbent paper.
  8. Enjoy your fondant potatoes.
