Ilaichi cookies


Ilaichi Cookies
I just love the aroma of Ilaichi in Biscuits ,Tea,Halva or Phirni.

 Ilaichis are recognized by their small seed pods, triangular in cross-section and spindle-shaped, with a thin, papery outer shell and small black seeds.They come in green color as well as black which is known as Green cardamom (hari ilachi )Or Black cardamom(badi ilaichi)

As rainy season is on ,so tea and coffee is on everyone's mind .So one day i was badly missing my ilaichi tea but with some ilaichi biscuits but it was not available in my house!Sounds sad na?
So just got an idea why not to bake the cookies at home ,so that i can enjoy fresh ilaichi flavor with my special tea!



When i have started baking my cookies , my daughter helped me in making Ilaichi ,ginger and tulsi tea.So that when the cookies will be ready,soon we are going to have tea and cookies together.


So finally after some time , my fresh baked cookies were ready!A happy moment to enjoy with the rains and of course with the sweetness and aroma of Ilaichi cookies.So here goes the yummy recipe with step by step process pics-

Ingredients-
  1. 1 cup Maida(all purpose flour).
  2. 1/2 cup Castor sugar.
  3. Salted butter - 75 grams(keep it at room temperature)
  4. 1/2 tsp Baking Powder.
  5. Ilaichi Powder(You can take 3 to 4 Ilaichi and crush them).
  6. 2 tsp milk for kneading the dough.





Method -
  1. First take a bowl and add the butter and whisk it for few minutes.
  2. Now add castor sugar in it and whisk it with butter till it gets mixed up properly.
  3. Now take the maida and baking powder and sieve it twice.
  4.  Now add ilaichi powder and mix it with sieved maida and add it in butter and sugar and mix it with beater or hand mixer.
  5. Now make a dough of it by adding milk gradually in the dough (remember the dough should be soft but not liquidy type and neither too hard).
  6. Now take a cling film and wrap the dough and keep it for rest for around 15 minutes.
  7. In the mean time pre- heat the oven at 160 degree for 10 minutes.
  8. After 15 minutes take the dough and make its balls .Place a butter paper on the baking tray and put the balls on it  by maintaining a proper distance as shown in the pic above.
  9. Bake it on a baking mode on the center shelf for around 20 to 25 minutes(time varies from oven to oven)
  10. After 20 minutes take out the tray and let the cookies cool down for 5 minutes ,after 5 minutes place the cookies on a wire rack and let it cool down completely for at least 20 minutes.
  11. Your Ilaichi cookies are ready to be served with masala chai or hot coffee!Enjoy!
