No-Bake Chocolate Biscuit Walnut Cake



              No- Bake Chocolate Biscuit  Walnut Cake

If you are not a good baker ,then you must go for this No-Bake cake .Its very Easy and full of taste like normal cakes.This cake when just goes to your mouth you will feel the chocolaty and creamy texture...It will give you an expression of mmmmmm!!!


Ingredients 
Digestive biscuit or parle g biscuit - 800 grams
Walnuts  - 100 grams(Chopped)
Sugar - 200 grams
Cocoa powder - 1/2 cup(60 grams)
Water - 1 cup
Butter - 150 grams
Vanilla extract - 1 tsp
Whipping cream - 1/2 cup (120 grams)
Chocolate chopped - 120 grams




Method
1.Take the biscuits and break them into small pieces.
2.Put them in a bowl.
3.Heat a non-stick pan on medium heat.
4.Dry roast walnuts for 5 minutes take it off.
5.Spread the roasted walnuts over the biscuit bowl.
6.Take a pan put sugar, cocoa powder mix it well  gradually add water in it whisk it well.
7.Take butter and mix it in the content.
8.Keep the pan on the flame boil for about 7 to  8 minutes on a medium heat stir it well.
9.Set aside to cool for about 10 to 15  minutes again whisk it and pour  this liquid into the biscuit bowl and add vanilla extract also.
10.Mix it well.So that the biscuits ,nuts should get combine well with the cocoa syrup.
11.Take a non-stick cake ware or you can choose a plastic container also,grease it with little oil and add the whole biscuit mix into it.
12.Press it gently with the help of a knife or a flat spoon.
13.Refrigerate about 30 to 60  minutes.
14.Take another pan add whipped cream heat the pan just it begins to boil add chopped chocolate into the cream.(for 3 minutes)
15.Take off the pan mix well the chocolates and the cream for 1 minutes till they turn smooth.
16.Take your cake out from the fridge pour the chocolate cream mixture on the cake.
17.Spread it evenly on the cake,again refrigerate it for 3 to 4 hours before serving.
18.Start demoulding the cake very gently.
19.Garnish it with chopped walnuts.




 Your NO BAKE CHOCOLATE WALNUT CAKE is ready.Enjoy :-)

Strawberry Chocolate Cake



                                         Strawberry Chocolate Cake

As my family is a big strawberry lover but i am a chocolate lover! One day my hubby's birthday was round the corner.So just got an idea to go for a fusion cake .
Tried my hands on both the flavors chocolate and strawberry!
Both of them loved it very much!!

Ingredients 
1 packet of ready made cake mix
Butter - 100 grams
Warm milk - around 1 cup you can add more if needed

For icing
Fresh strawberries - 11 to 15
Sugar - 1/2 cup
Fresh whipped cream - 150 grams
Grated chocolates and strawberries for garnishing 
Make sugar syrup by adding 1 cup of water and 1 cup of sugar by boiling the water.



Method
1. Take a bowl add cake mix,butter,warm milk.
2. Mix it very well it should be lump-free.
3. Preheat the oven for 3 to  5 minutes and pour the mix into a mould and bake in microwave for 5 to 6 minutes.
4.I haven't used convection mode microwave so kindly check your cake in between by pricking a tooth pick,if the tooth pick comes out clean then your cake is ready.
5. You can bake more if it is not ready.
6. Demould the cake and let it cool for few minute
7.Pour the sugar syrup on the whole cake properly and with the help of a fork prick it on the cake, so that the syrup should enter inside the cake.

For icing
1.Take a grinder add strawberries and sugar in it grind it properly.Keep aside.
2. Take the whipped cream add strawberry mix into it stir it slowly.
3. Cut the cake from between spread the strawberry mix on the cake.
4.Put the layer back on the cake.
5.On the top do the icing again and garnish it with fresh strawberries  and grated chocolates.
6.You can also add whipped cream with melted chocolate icing(as per your choice)

Punjabi Dum Aloo

   
                             Punjabi Dum Aloo

Dum aloo is one of my favorite Sabzi!!As i love to have this with Crispy paranthas ,Boiled rice or with Chapatis. Dum aloo can be cooked in kashmiri style or punjabi style.kashmiri style Dum aloo does not  contain garlic or onions ,but punjabi dum aloo is made up from onions ,garlic and spices.So here's the recipe.

Ingredients
Potatoes - 5 to 7 small sized potatoes(pour boiled )
Onions - 2 to 3 medium sized (grated)
Tomatoes - 3 to 4 (grated)
Garlic - 1 whole (10 to 11 cloves)
Ginger - 1/2 tsp (grated)
Oil - for frying
Dry masalas 
Cinnamon stick - 1 
Bay leaf - 1
Cumin seeds - 1 tsp
Mango powder - 1 tbsp
Coriander powder - 1 tbsp
Sugar - 1/2 tsp
Red chili powder - 1 tbsp( you can use Degi mirch for color)
Salt - as per taste
Green coriander -(fresh chopped)

Method - 
1. Take a wok peel the potatoes and deep fry them.
2. When they turn golden brown take them out on an absorbent paper.






3. Now take another wok add oil , cumin seeds, bay leaf and cinnamon stick.
4.Let them crackle.
5.Then add onion paste, garlic and ginger in it.
6. Stir fry till it turns golden brown add salt ,mango powder.
7.Add tomato paste in it stir it on a very slow flame when the masala starts leaving oil.
8.Add red chili powder, coriander powder,stir it very well till the masala changes its color.
9. Now add fried potatoes in the same stir it very slowly so that the potatoes should not break down.
10. When the masala start sticking to the potatoes prick the potatoes with a fork, so that the masala should be inserted properly in the potatoes.
11.lastly garnish it with coriander leaves.



                                           

Eggless Chocolate Mousse

Though i am a hard core chocolate lover,and i love to experiment with chocolates; one day i was craving for chocolate dessert, so i found a quick solution for it and that was "chocolate mousse". It's texture and melted chocolate will give you a feel of heaven. Try this out it's really yummmm!!! 

 Ingredients 
Fresh cream - 150 grams
3/2 cups milk chocolate or dark chocolate (chopped)
Grated chocolates,choco sticks,or gems for garnishing.




Method-
1.Melt the chocolate bars by using double boiler  method or you can use microwave for 2 to 3 minutes to melt the chocolate.
2.Now take a bowl pour fresh cream in it add melted chocolate.
3.Mix well gently not too vigorously.
4.Take a serving bowl pour the  mix and garnish it with your own choice.
5.Keep in fridge for 40 to 60 minutes or till the mousse is set.

One day my Friend's  kid came to my home and offered me this kind of chocolate .When my child had this she felt crazy about it !She said," mumma now i wanna have this bar again",I asked my friend about this and she said, she has got this from abroad .
Now what to do?So i tried this Bounty at home for her and the result was superb. When she came back from school i asked her to try this out . Guess what ?She just kissed me and said "Mommy You Are the Best".I felt overwhelmed after seeing her reaction!
So every Mommy should try this simple sweet recipe.

Ingredients - 150 grams( desiccated coconut powder)
                      3 to 4 tbsp milkmaid(condensed milk)
                     Chocolate bars or Chocolate compound (for coating)
                     Milk - 1 tbsp

Method - Firstly take a bowl add  coconut powder ,condensed milk and stir it very well (if you are feeling the powder is still dry add more condensed milk into it)Then make a tight dough from it (you can apply butter also on your hand to make the dough little greasy) Now take a plate spread a butter paper or a thin plastic sheet on it.Grease the sheet with little bit of oil.Now take the dough and take make its balls and shape them in a chocolate bar and place them on the butter paper.keep them in deep freezer to set (for half an hour )check it after half an hour ,If it is little soft then you can keep it for more time.







Now take the chocolate bars or compound and start melting in microwave for 3 minutes or by double boiling method and add Milk in it to make the chocolate little in liquid form. Now take the bars out from the freezer and coat them in the melting chocolate and keep them one by one on butter paper,so that they should not get stick.keep them again in the deep freezer for 1 hour till they get set.

Now your bounty is ready to eat..Enjoy!!

Tomato soup is loved by all.This flavorful and healthy winter tomato soup can be prepared easily through this recipe.This tomato soup costs you less than you would buy at the store.Try out this easy recipe. Im sure you would gonna love this!!!!!!

Ingredients
Tomatoes - 7 to 8
Garlic (crushed) - 1/2 tsp
Salt - as per taste
Black pepper powder - 2 pinch
Sugar - 1/2 tsp
Cream - for garnishing
Salted Butter - tsp
Water - 1 cup

Method
Firstly take tomatoes pressure cook them and wait for 2 to 3 whistles.After that when the tomatoes start cooling down peel their skin and mash them in a bowl.Keep aside.
Now take a wok add butter ,crushed garlic, mashed tomatoes stir it for  few minutes.Now add 1 cup of water add salt, pepper powder,sugar and stir it well.After 2 to 3 boils switch off the flame and pour it in a bowl garnish it with fresh cream and pepper powder. 







Spicy Butter Chicken



Spicy Butter Chicken

Are you a non-Veg lover? love spicy food? So this dish is for you. !!Punjabiyan di shaan!! Makhani Chicken!!
Butter Chicken is usually mildly spiced curry .Due to its sweet flavor some people avoid to have this.But i have made this chicken in my own style because its a combination of spices and sweetness which are enhancing its flavors. 


Ingredients
Chicken - 1/2 kg
Onion - 2 medium sized(ground)
Tomatoes - 4 to 5(make its puree)
Garlic - 5 to 6 cloves
Bay leaves - 1 leaf
Pepper powder - 1  tsp
Mango powder - 1 tsp
Coriander powder - 2 tsp
Red chili powder - 2 tsp
Turmeric powder -1/2 tsp
Garam masala - 1/2 tsp
Sugar -1/2 tsp
Curd - for marination( 1/2 cup)
Fresh cream or malai - 2 tbsp
Salted Butter - 50 grams
Salt - as per taste

Method

For marination-
Firstly wash the chicken with warm water and clean it properly.Take a bowl add chicken ,curd ,pepper powder(2 pinch),turmeric powder(2 pinch),salt(2 pinch),garlic(2 to 3 cloves),ginger(1/2 tsp) Mix these ingredients really well and refrigerate it for at least 1 hour.

For gravy-
Take a wok. Add oil, bay leaf,onion paste,garlic and ginger paste. stir it well till it turns little pink in color.Add tomato puree in it. Now add salt,turmeric powder,sugar,red chili powder,coriander powder,pepper powder,mango powder stir it very well.When the masala starts leaving oil add marinated chicken in it(with the curd marianted masala)Stir the chicken on a low flame.Stir it very slowly and mix all the masalas properly.


Check the chicken that it has started turning tender ,then add cream or malai in it.Mix it well again add little water for the gravy (around half cup).When the  gravy of the chicken starts changing its color add garam masala into it.Lastly add salted butter.

Enjoy! this makhani texture of the chicken with butter naan or tandoori rotis!

Dahi Bhalla

 
                                                           Dahi Bhalla

Dahi bhalla is loved by people who are fond of chat.
They are made up of  urad dal and few spices which add taste to your tongue. It is specially made on the occasion of Holi and Diwali.


Ingredients-

Urad dal - 2 cups(soaked overnight)
Green coriander - 3 to 4 tbsp(chopped)
Ginger - 1 inch piece(grated)
Raisins ( for filling the bhallas and garnishing)
Salt - as per taste
Oil for frying

Imli ki chutney - 200 grams tamarind (soaked in water overnight)
1 Cup Sugar or jaggery(gud)
Salt,pepper powder,Cumin powder and black salt as per taste (mix it all together)


Method- For Bhallas take the soaked daal and grind it in a mixie jar , add water if required(do not add too much of water)Add salt,grated ginger and 2 tbsp green coriander in it)Now mix it well.
Take a wok add oil.Take the batter in your palm and make small balls with it balls should be of medium size not too big not too small. Take these balls on your palm and fill them with 2..3 raisins and fry them at medium flame till they turn golden brown in color.
Now take a bowl filled with water and soak the fried bhalla in the water.

Squeeze the bhallas and start plating as per your preference pour curd over it, imli chutney, sprinkle normal salt,and the mixed masala  over it and garnish it with coriander leaves and raisins.




For Imli chutney - Take a pan add imli with water which was soaked overnight.Then wait for 1 boil.Now strain the pulp and store the imli water.
Take a pan add the imli water in it add sugar and stir it well .Add black salt,red chilli powder,pepper powder,Cumin powder(or you can take the mixed masala which we have used in Dahi bhallas.
Stir the imli paste till it gets thick( one string )Now add raisins in it and switch off the flame.

Your dahi bhallas are ready to serve. Enjoy!

Double Layered Burfi

Chocolates are almost liked by everyone ,so i tried this dessert and it was just loved by everyone in my family.This burfi is really easy and luscious in taste.You must try this sweet specifically on festivals. 


Ingredients

For Plain Burfi 
Khoya - 300 grams
Sugar - 100 grams
Green cardamom - 4 to 5 pieces
Warm milk - 2 tbsp

For Chocolate Burfi
Khoya - 200 grams
Sugar - 70 grams
Cocoa powder - 2 tbsp
Warm milk -2 tbsp


Method-
For  Plain Burfi
Take a wok add  crumbled khoya into it stir it till it starts melting. Now add sugar,cardamom powder add milk to make it soft.stir the mixture till it starts boiling. Then take a deep plate grease it with little oil ,start pouring the mixture and tap it once .

For chocolate Burfi
Take the same wok add khoya,sugar when it starts getting soft add cocoa powder and milk in it.Stir it nicely and wait for a boil.Now pour the mix on the plain burfi's batter.Pat the plate once and with the help of knife start making it plain.Likewise we do in icing of cakes.
Keep the mixture in freezer when it cools down for(2 hours)

After 2 hours take the burfi out and start cutting it into pieces or any shape you desire.Enjoy.

Mava Gujiya

 
                                   
                                                       Mawa Gujiya

Mava Gujiya is one of the most popular Sweet in India specially on the festival of Holi!! Holi is a festival of colors and without
Sweets its incomplete,so to fill this festival with joy and festive mood Gujiya is going to be a perfect choice for celebration!!

Ingredients -  For the dough
                       All purpose flour- 2 cups
                       Ghee - 2 tbsp
                       Salt - 1/2 tsp
                      
    For stuffing -

                Mawa (khoya) - 250 grams
               Desiccated coconut - 100 grams
              Roasted semolina - 2 tbsp
             Castor sugar - 1 cup
            Green cardamom(powdered in a mortar -pestle)3-4 pieces
            Chopped dry fruits - of your own choice
            Oil or ghee - for frying
                       

Method - Take a bowl put all purpose flour, salt,ghee and rub 
                     the powder with your palm so that the ghee should
                     get mixed up properly with the flour. Now take the 
                     normal water and knead the dough.The dough
                     should be little hard not too soft.Keep this dough to
                     rest for 30 minutes in a moist kitchen cloth.

  
For the stuffing - Take a wok crumble and grate the khoya and                                  stir it till it changes its color. 
                             Now add sugar and green cardamom
                             in it. Then add desiccated coconut and mix well
                             for 2 to 3 minutes and switch off the flame.
                             Put the ready mixture in a bowl and add dry
                             fruits in it keep aside and let it get cool.




                           
                            Divide the dough into two parts roll each part
                            in your palms to make balls and place balls in
                            the same bowl cover with moist kitchen towel.
                           Dust the rolling board with the lightly some 
                           flour. Roll each ball with the help of a roller and
                           make small circle. After that take a gujiya mould
                           place the ready small circle on it , take 1.5 or 1
                           tbsp of the khoya filling on one side of the circle,
                          spread some water with your hand on the edges
                          of the circles and carefully close the mould gently
                          press the edges. Trim the extra edges and take 
                         take the gujiyas out from the mould and deep fry
                         them in hot ghee or refined oil .Turn them 
                         carefully and deep fry till the gujiyas become
                         golden in color. Drain on kitchen paper tissues.
                         Enjoy with  your family . Buttery Idli Uttapam

This is the most simplest and quickest breakfast i have ever made. Actually its my own innovation as one day i just woke up early in the morning and i was going through butterflies in my stomach !! So i finally got an idea and made this toothsome uttapam...

     Ingredients - One cup Idli mix( i have used MTR idli mix)
                           Half cup buttermilk or you can use curd also 
                          Salt (Optional)
                          Salted Butter



   Method - Firstly take the idli batter and add buttermilk into       it.Stir it very well to avoid lumps.(if you are using curd then add water also).
Then add salt and mix it well.
Now take a flat pan .Drizzle some oil on it and pour the batter. Spread it on the pan nicely in a round shape.Now flip it to the other side and drizzle some more oil if needed.When it starts getting crispy take it out from the pan.Dollop with butter.Enjoy with coriander chutney or ketchup!!




  


Dabeli

Dabeli is a snack food of India, originating in the Kutch region of Gujarat. It is a spicy snack made by mixing boiled potatoes with a dabeli masala, and putting the mixture between pav (burger bun) and served with chutneys and garnished with pomegranate and roasted peanuts.


   Ingredients - 4 butter fried buns              
                                    boiled peeled potatoes (1 medium sized) mashed
                                    onion (1 small sized) chopped
                                   
                                   For dabeli masala- Cinnamon sticks (1)
                                                                   Zeera (cumin seeds)1 tsp
                                                                   Coriander seeds(1/2 tsp)
                                                                   Pepper (5 balls)
                                                                  Black salt (1 tsp)
                                                                  (Dry roast these masala and grind them)
                                                                  1 tsp (mango powder
                                                                  1/2 tsp sugar
                                                                 
                                                          For garnishing - Pomegranate ,Red grapes and
                                                                                     Fresh coriander.
                                                                                     Aloo bhujiya or any kind of sev.
                                                                                    Roasted peanuts



                                                                                              

     Method -Take a wok add oil and put the boiled mashed potatoes in it. Stir it for 2 minutes then add onions into it.Now add dabeli masala ,sugar and mango powder in the potatoes.Now stir the masala for 5..6 minutes.Keep aside.


Now take a bowl start layering -  Firstly  add the potato onion masala
                                                 Second layering of  sev or aloo bhujiya 
                                                 Third layer of peanuts
                                                 Fourth layer of fresh coriander (Chopped one)
                                                 Fifth and  the last layer of pomegranate and Red grapes
